Is pepperoni low carb/o carb?

I finally met my goal a few weeks ago at 168.  Since then I have been eating
a lot of pepperoni, the label says 0 carbs, 0 sugar yet when I got on the
scales the other day I had gained 1 lbs this is the first time that i have
gained weight since i have been on atkins.  i find it kinda strange.  the
atkins website says some processed meats like pepperoni contain hidden carbs
or sugars, so even though the label said 0, I would have to assume that the
label on the hormel pepperoni is a bunch of bs?  Anyone else discover this?

I guess no more pepperoni for me, at least not a bag a day anyways lol.

I can answer that in one word:  SODIUM.  I finally tried nuking
pepperoni for a snack and the next day I was up 2.5 lbs!  I waited about
a week and tried it again -- boom, up 2.5 lbs overnight.  I LOVED the
crispy pepperoni, but I'll have to save it for special occasions and be
prepared for the resultant overnight water-weight gain.  I keep track of
lots of nutritional info (assuming I HAVE all the info) and figured out
that I generally do okay if I have up to 2000 gms sodium per day, but I
was in trouble water-weight-wise if I went up to 3000 gms per day.  One
little 1.5" slice of pepperoni has about 35g of sodium, so 20 slices
adds up to 700 gms of sodium to the daily total.  If I back down on the
sodium after that, the weight drops back within a day or two.

I've been meaning to post about that, so thanks for reminding me :-)

2000 grams = 2 kg = 4.4 lbs ?? Maybe that should be milligrams,
but that's very little: 2000 milligrams = 2 grams ...

I am not sure about how much daily sodium intake you are referring to ....

BTW, ist the weight actually just the sodium part of tabel salt ?
(table salt = sodium chloride, so the chlorine in it has some weight, too)

One slice cannot possibly weigh over an ounce ...
(one ounce = 28grams)

You're right -- my bad -- it's mg.

I tend to get about 2000-2300 mg/day.

Not sure what you are asking.  I don't usually even PUT table salt on/in
my foods -- this is just what comes naturally and what I get from the
bacon that I eat most days.  I'm really should cut down on the bacon.

Here is the nutritional info from the pepperoni package I currently have
in my fridge The slices, upon closer inspection, appear to be almost 2"
in diameter).  A serving size is 9 slices (29g -- 1 slice = 3.2g in
weight):

calories:  8
fat: 13g
  sat:  4.5g
cholesterol:  30mg
SODIUM:  570mg
carb:  0g
protein:  6g

Hmmm, I used the nutritional info from a different brand in my personal
database, because I can see now that there is even MORE sodium than I
thought in this package (Galileo)since 570/9 is 63.  That is a LOT of
sodium.  That also explains why I thought the slices were smaller -- the
other brand probably DID have smaller slices, hence the 35mg of sodium
in that brand.

Oops -- I REALLY have to pay more attention -- calories are 150 for 9
slices -- there are approximately 8 servings per package.

I've since checked my database and see that the first brand that I had
tried was Hormel, so if you ARE going to go the pepperoni route, you
might look for THAT one :-)

I hope this isn't taking us off-topic, but I don't think it warrants a
new thread so i'll piggyback and if i'm bad y'all can just shoot
me...LOL

I don't add salt to anything any more. Several years ago I switched to
Half-Salt, and for the last 3 months have been doing without any
shaker-added. I was a salt-aholic and it was really tough to get rid
of it, but I feel better for it. I know - get to the freakin' point!!

I was in Costco yesterday and walked past a pastrami demonstrator. She
passed me a cup with a little piece skewered on a toothpick and I took
it and put it in my mouth without thinking. My GAWD!!! The salt nearly
made me gag. I couldn't believe how awful it tasted, and I used to eat
that stuff my the quarter pound on sandwiches.

I guess my point is that most deli-meats are loaded up with salt. It's
a preservative of sorts, and it *does* add taste. I'm just not doin'
it any more.

Now - if the day would come when I would put something sweet in my
mouth and gag I would be one happy camper!

Salamis are VERY high calorie as well as high in saturated fat. Not a
good thing to eat in quantity, not really "snack" food. No matter how
few carbs you eat, you have to avoid excessive calories.

Why anyone would start worrying about seeing a one pound difference in
weight over a week is beyond me.  It's normal for someone 168 to
fluctuate by a couple of pounds, haven't you seen this before?

really..I can vary 3 pounds day to day depending on hydration levels.

If you're a girl, you can expect an up to five or six pound
fluctuation depending upon what time of month it is. As for me, I only
look at my pants size, not what the scale says.

As always, calories DO count. Howsomever, you gotta count up to 3500
extra, unburned, to build a pound of fat. As the others in this thread
have said, it's probably the weight of retained water triggered by the
extra sodium. Many say you shouldn't weigh yourself every day. I in fact
do and record it all in a spreadsheet, which includes a graph. Said
graph shows peaks and valleys. A depth of 2 to 2-1/2 pounds on any given
day is not too uncommon. The trend-line is flat, at about 165 pounds.

Anyway, for me the question is moot, since in my personal experience
pepperoni is in fact high-carb. The only way I ever ate the stuff was on
top of a pizza...

Little digression here: is there something wrong with temporary water
weight? I mean, it's not like the extra fat that wraps around your gut
when you get to be my age, is it? Where is this water physicaly located?
Does it even show?
