My daughter in law is on the low carb diet and she's doing wonderfully.I'm
having the family over for Christmas Eve. and I'm hoping someone can give me
some ideas as to what I can serve her.
This is part of my menu
Clam Chowder (cream)
buffalo wings
stuffed mushroom (crab meat etc)
marinated mushrooms
shrimp cocktail
snail salad
spinach calzones w peperoni & cheese
there's a bunch of other stuff to much to list.
Can she eat any of the above mentioned things. Can anyone give me suggestions,
I'd like this to be a surprise for her, she's such a sweet and wonderful girl.

The marinated mushrooms and shrimp cocktail particularly will be great!
The pototoes in the clam chowder would be problematic, as would be any
breadcrumbs in the stuffed mushrooms, breading on the wings (if no
breading, then the wings are ideal), and the crust on the calzone is a
pretty big no-no. I don't know what's in snail salad, so that could go
either way. I'm sure snails themselves are low carb.
Now, what I would appreciate when going to a family member's house on
Christmas Eve would be the knowledge that they didn't truncate their own
pleasure on my account, while at the same time there were foods I could
eat and enjoy. I think you've got a pretty good sampling of low,
medium, and high carb treats -- something for everyone!
So I think you're doing great, and I suspect she'll have a great time.
If you were to add to your seafood theme with some scallops or oysters
wrapped in bacon and maybe a few raw vegies (celery, red/green peppers),
I think she'll be singing your praises well into the New Year!

Seconded! Too much too obvious changes might make her diet the center of
conversation, which might be embarrasing for her. Anyway for her it's an old
subject, she probably would rather eat and listen to new subjects than have
to answer even very nice questions about her diet.

Hm, I wonder if I could eat the clams and the liquid and just leave the
potato chunks on the plate?

Would sourdough breadcrumbs be an obvious change?

I often just cut the breading off tempura etc and eat the stuff inside.

I find it easy to eat the insides of calzone, burritos, etc and just leave
the crust. Same with quiche, pies etc.

Thanks for the suggestion. I will have a veggie platter and the scallops
w/bacon sound great.
I think after the holidays I will try to do the low carb diet, I could stand to
lose some weight, I just turn 60 and the older I get the harder is seems for me
to lose and plus having a thyroid problem doesn't help.

And remember try not to add too much sugar / honey in the marinate if you're
doing any marinating - that is, for those dishes that are already low carb.
Assuming that your DIL won't be eating the high carb options on the table you
wouldn't need to do any changes for dishes that are high carb - breaded or have
starches / potatoes / flour.

Oh, Ma'am - come and cook for me? : )
Starches, including potatoes and flour, are now restricted for your DIL - so
some of the foods listed would be a problem for her (calzones, and potatoes
in the chowder, for instance), but most of that looks great.
The cream, cheeses, etc. aren't forbidden on a low-carb diet, but she may be
watching the calories too - but hey, it's Christmas, hopefully she can plan
a few treats into her diet.

Turkey is LC....Ham is too if you don't get the honey baked kind (and it
still is if you avoid the glaze). Green beans are good too. You can even
make LC dressing, but the typical recipe calls for pork rinds, so you might
not want to bother with that.

You can also make a LC cheesecake sweetened with splenda. Just don't tell
anyone it's LC (except your DIL) and everyone will be happy.

That's so sweet! You really just have to modify some things. Like chicken wings
are great, but not if they're breaded. No pasta, bread, sugary sauces, etc. My
mother in law wouldn't recognize me on the street, much less cook something
special for me, LOL!

From what I can see she will be just fine on her own. You don't need to
make any one special thing for her. We LCers like to eat natural foods like
meat, fish, eggs and veggies. We don't eat sugar, bread, pasta, rice, fruit.
It's nice that you're concerned, but in 6 years of doing this, I have yet to
go hungry at anyones home, or restaurant.
