Low carb pudding or mousse?

can anyone reccommend a tasty low carb mousse or pudding?
i have checked a few places and can't find even a Jello brand mousse that is
sugar free and low carb
what do you all do for a creamy-sweet craving?
i am partial to mocha and chocolate flavors

Whip up a little heavy cream with cocoa powder and a scosh of Splenda,
and, perhaps, a few drops of vanilla or of orange oil.

Take a pack of sugar-free Jello, mix it in half a cup of boiling water (let
it cool down to just above room temperature). Whip up half a package of
lo-cal Nutriwhip in the food processor. Add half a block of lite tofu (the
silky kind). Add some lo-carb soy milk to the liquid Jello and pour it in
with the rest of the concoction (less milk = firmer product). Makes about
four servings. You COULD eat it right away, but give it at least a half hour
in the fridge to let it set a bit.

Variations:

o - I usually add slivered almonds for texture.
o - Add, or sub, some quark cheese.
o - Psylum husks actually work pretty well in this recipe.
o - Rasberry Jello and a few tablespoons of Davinci white chocolate is a
yummy combo.
o - I've tried using whipping cream, but it just didn't set very well (try
it anyway, it might work for you)
o - I haven't tried this with a bit of instant coffee (or cold espresso),
but it's worth a shot. I just can't imagine what Jello flavor to use.
o - I've tried coconut milk and regular gelletin, but I just can't figure
out how to cook the stuff.

I mix a little cream cheese, sour cream splenda and some flavoring
(usually vanilla or lemon)  Whip it up and it makes a very thick
satisfying desert.

Jello makes instant pudding that is sugar free and fat free.  It comes in
chocolate, vanilla and pistachio (possibly other flavors, but that is all I
have seen in my grocery store).  I follow the directions, except make it with
half and half.  One caveat: you pretty much need to eat it by the next day or
the cream goes bad and it tastes awful.

The other caveat is that it may not be appropriate for people who are
trying to keep their carbs really low. And if you make it w/ half and half
(and it is quite nice that way), it's not trivial in the calorie dept.
But, for people who can eat it in moderation is it a nice treat.

Another lovely one, although not so good this time of year is mascarpone
mixed w/ berries and possibly a little artificial sweetener. If you get
really good mascarpone it tastes like high fat, thick but unfrozen
icecream.  Actually, mascarpone mixed with any sweet flavorant is pretty
nice.

Course, I'm so determined not to have any backsliding that all this is off
my plate for the foreseeable future, but it is a nice little treat.

The instant pudding mix has 6 grams of cornstarch per serving.
Six grams isn't that high, but if you're eating the whole batch in
one day, it becomes 24g

Some sort of flan ought to work, or any egg custard. Things can be done with
cream cheese also.

I tried some of the no-sugar ice creams and they were more like mousse than
anything else. With a bit of whipped cream on top they would have been very
moussy.

For quick and cool I like the lumps of thick cream that happen in 'heavy
whipping cream'. Or the rich top layer of canned 'coconut milk', especially
chilled (tho some people say coconut is the wrong kind of fat).

Sometimes my breakfast drink of whey protein and chocolate and water turns
into pudding in the microwave, but I don't like it. :)

If you don't count calories, you can make Rose Levy Beranbaum's
cheesecake without the crust and using Splenda powder.  It works
perfectly that way and tastes indistinguishable from the sugary kind.  I
made it last weekend for some lowcarbing guests.  Now there's just one
piece left... and I haven't eaten it today....

Her chocolate Torte also works wiht baker's unsweetened chocolate and
Splenda.  

or (more occasionally) low-carb pancakes with soy or protein powder

or a sweet omelette with spices and Da Vinci.

I had forgotten about the splenda whipped cream and cream cheese idea.YUM.

has anyone tried individual cheesecakes using a muffin tin?
i figure if I use nonstick spray or even butter to coat the pan it won't stick
too badly.

Yes, I've made mini cheescakes using the recipe right from the Philly
cream cheese package.  I used Splenda instead of sugar and ground
walnuts instead of graham crackers.  I also added lemon zest.  They
come out really great, but remember they are high in calories, so I
wouldn't over do it.

there's a brand of mousse mix called 'Sans Sucre' that i find in wonderful
flavors - mocha cappuchino, chocolate, cheesecake, strawberry...  i use
heavy whipping cream instead of the skim milk they call for, and about
double the amount (tastes too strong for me, YMMV), for about 4g/serving.
eat with a demitasse spoon, enjoy every bite.

Ya can also make puddings from "scratch" using guar gum along with
flavors and low-carb or no-carb sweeteners.   I usually add cellulose
and psyllium to mine for extra fiber content.  Not really the same as
high carb puddings, but, allowed to age for a day or two,  are not too
bad.

I mix about 1/2 cup of plain yogurt (the full-fat kind) with a
tablespoon or so each of Splenda and cocoa powder. It's a fairly good
substitute for chocolate pudding, and I think it might be even better
with a bit of instant coffee in it.

Tried today...didnt calculate with fitday or anything....was okay, but may
fiddle with it.  (might add a bit of coffee as someone suggested)
Heavy cream...splenda, cocoa...whipped with beater.
