Nut soup?

I need some extra fat for energy. I am glucose intolerant and I don't get any
energy from carbs.
my foods are not super fatty and I need some zip for my two 10 bike rides a
day.
I just started simmering ground nuts (almonds and hazel nuts and some coconut)
with some salt water and some coconut oil and butter. a few berries in when it
is thick. any otter idea's?

Steve, what is your objective in cooking nuts so elaborately? It's not
that I am against it, but I do not see what is it that you are trying
to accomplish.

I have a recipe for a great peanut soup - it's rich and creamy...great
on a cold winter day. Can't really say that about a handful of peanuts,
though.

Sounds like what's he's trying to accomplish is creating a yummy soup
from low carb, high energy foods.

I'll try to remember to do it tomorrow. It's a recipe I made often
before going LC so I'm not sure it'll fit the bill for folks here. But,
it's delish. Probably can be tweaked  a bit to at least lower the carb
count.

kind of making a cereal to eat something different. I get pretty tired of nut
butters. it's nice and creamy but still a bit too chewy.

I found this recipe for Peanut Butter Soup while searching for something
else.  I haven't tried it, but it looks interesting.  You could substitute
1/4 to 1/2 teaspoon xanthan gum for the flour to make it lower carb.  If
you try it, let us know how it turns out.   :-)

I am not sure I can handle any thickeners. I did make the almonds and hazel nuts
into butter and that worked ok. it thickened up ok and a few berries made a good
soup.

No carbs . . . combination of grass-fed beef jerky, grass-fed
tallow, honey and dried cherries.

If it contains honey and dried cherries, how can they say it has
no carbs?

Welcome to the round-off rules of US labelling
laws.  Pick a serving size so the carb count is
0.49 or less and you get to call it zero.  Same
with fat.

They probably use little enough honey and berries
that they only supply a bit of flavor, and then
the probably pick a small serving size.  Since
pemmican is 50-50 dried meat and rendered fat the
stuff has to be extremely fillng anyways so a small
serving size makes sense for a change.
