food dehydrator

Howdy losers

With all the posts about making jerky and pemmican, I decided to blow 40
bucks on a food dehydrator. I guess I could have used the oven but what
the hell!  First try was hamburger jerky. The dryer came with some dry
spice mix and I had hamburger in the freezer. It was good. Not great,but
 ok. About a lb. of chuck yeilded approx. 2/3 lb of meat sticks. I just
rolled them out by hand. They looked like something the dog left. The
kids said "eeeewww" but ate em like candy.
    I'll try a round roast this weekend. I'll also try some deer jerky soon
as there's some in the freezer also.
    I bought some frozen blueberries to dry for the pemmican. I'll give a
report when done.
    Another thing I dried was some yellow squash and zucchini. They turned
out very good. I sliced them about 1/4 inch thick. When dry they were
crisp and crunchy. The yellow had a sweeter taste, but both were very
good.  Makes a good scoop for ranch dip!
    Any way, just a new gadget to play with. When the garden starts bearing
this year we'll try drying a little of everything!

Drying food is great fun. Dried food can be stored indefinitely. We
dry our apples when we have a big crop. Crushing dried jerky is best
done in a blender.

I had too many tomatoes in my garden last year. So I got a dehydrator and
made sun dried tomatoes.  Yummy! And yes the last for ages!

Not to put too fine a point on it, but you made *dehydrator* dried
tomatoes. Sun dried tomatoes are dried in the sun. I've done both and
there's a decided difference in texture, flavor and appearance.

If it was done inside in a food dehydrator then they aren't sun-dried
anything. But it is a great way to store plenty of tomatoes. We do it
all of the time, except ours are sun-dried since we are in the
southwest with lots of heat and sun.

I got my dehydrator following advice on this group.  I wanted it mainly for
making beef jerky.  It worked great, but I found myself losing control and
eating the jerky almost as fast as it was produced.  So much for making
jerky.  I think I'll try something like those zucchini and squash 'chips'. If
that doesn't work well for me I'll have to give the dehydrator away to some
friends!

What did you use to brine/spice the meat?

That would be pretty carby, I think.
