I have heard so many opinion about how good vegetables are for low carbers,
except the root vegetables.
However, there seems to be VERY different opinion from even the experts on
how good they are for you once they are cooked. Some books I have read say
that veggies are practically worthless unless you eat them raw and have lost
virtually all of their nutritive value. And then on the other side of the
coin, I recently read where Broccoli HAS to be cooked or the body can't
absorb the nutrients. Any comments on this subject? Thanks!

I don't know about the broccoli thing, but I prefer all of
my veggies raw or just barely cooked. That crunch thing is
very powerful in satisfying my appetite.

I read you need some fat in order for your body to use the nutrients in the
veggies.
I don't like broccoli raw and I don't like it boiled to death and swimming
in butter, I do like it lightly steamed with just a little olive oil.
I do like carrots raw so I would like to know if I really need to cook them
or if I would be better off with ranch dip.

if you overcook vegetables some of the nutrients will be transferred to the
water leaving you with food devoid of nutrition... but honestly, as
depleated as the soils are these days, eat them however you want and just
take your vitamins.

The Warrior diet guy says cauliflower and broccoli are best lightly
cooked, as the fiber doesn't release their nutrients unless they have
been steamed or such. could be.

Sure. Tell me exactly what you want to hear, and I'll find you a link to
someone who says it.
In my personal opinion, broccoli and tough asparagus have to be steamed
to be edible. Anything else I can eat raw, steamed or lightly sauted or
stir-fried. I would never, ever, boil an innocent vegetable in a quart
of water until it's dead. That's mostly a matter of taste, but I think
it's pretty much agreed by all that many of the good substances are
going down the sink with that treatment.
