I remember a few days ago we got into a discussion about salt intake and
water retention. I commented on how a friend of mine claimed to have gained
7 lbs after a ride during which he drank a lot of Gatoraid.
I went back to him on that issue after our discussion. He reminded me that
this weight seemed to come on during a short period AFTER the ride day and
then eventually faded during that latter part of the following week. He
also commented that he doesn't normally consume so much Gatoraid on this
rides nor does he eat a lot of salt. Knowing this guy as I do, I'd have to
say that he is not prone to rash observations. If he had eaten an unusually
large amount of food, I think he would have noted it. He only weighs 180
lbs, too, and has never been really big.
Finally, Lyle McDonald makes a claim on his body recomposition site that a
high salt intake can cause a rather large retention of water, specifically,
he says:

low-carbohydrate diet and feed them carbs again, it's not uncommon to see
weight spike by many pounds very quickly. A high salt intake can cause a

water retention) that occurs during their menstrual cycle. "

Actually, it is kind of complex, but remember, oil and carb == instant fat.
It will be disaster to eat too much carb with average to high fat intake.
