Imagine my surprise.
I love mussels and checked the carb count on Fitday. The USDA did not have
it, only clams.
Raw they show 1 cup at 5.53 gram. Steamed or poached 10.98 gram.
This may have been discussed, but what am I missing? How can you steam 5.5
carbs and turn them into 11?

Cooking food usually reduces its volume. (A notable
exception is popcorn.) If you take a cup of raw mussels
(5.53 grams of carb) and steam or poach them, you will end
up with about half a cup of cooked mussels whose carb count
will still be 5.53 grams. Therefore it would take two whole
cups of raw mussels (11 grams) to make one cup of cooked
mussels (11 grams).
In most cases cooking doesn't alter the carb or calorie
count by very much. It does reduce the volume considerably
however, which means you end up with essentially the same
carbs and calories packed into a smaller volume.

The same thing happens to a lot of frozen fruit and veggies. I went nuts
trying to figure out why 1 cup of frozen strawberries had a lot more carbs
than 1 cup of fresh strawberries in FitDay until I realized that the count
for frozen meant they had been thawed thereby compacting them. Since I
measure my berries while they're still frozen, I count them as fresh when
entering them in FitDay.

This is understood. However, the 1 cup of raw mussels I had cooked had
shrinked perhaps 20% if that. But it makes sense on things that shrink in
cooking. This was not the case here.

USDA SR-17 database has the same "Mullosks, mussel, blue, raw" entry

Seems Fitday simply draws on the USDA. The downloaded USDA on my desktop
did not show mussels at all. But fitday yielded it on search.
I did not check the USDA online.
Another thing about Fitday is the fiber is not taken out it seems. But
this has been discussed.

Customize your columns in FitDay to show 'Carb - Fiber'. I don't bother
showing the 'Carb' column at all.
