Atkins is only extreme for two weeks.
Bob says he's a type l diabetic, and he's trying to minimize his need
for insulin while controlling his blood glucose.
He seems to prefer his carbs in liquid, fermented form.

Dave Draper and some of his fans have been known to go on a tuna-and-water
diet for weeks at a time. I personally don't care for tuna that much.

Could be done, but will hurt your health.
First, one must analyze what we must eat in order to be healthy.
1. Water -> No carb
2. Multi-Vitamin & Mineral & Metal Tablets -> contains some carb(almost zero)
3. Fat -> some MIGHT be converted to carb
4. Protein -> excess protein(exceed body's need) will be converted to carb
5. Psyllium husk fiber(or any other fiber) -> it is carb(not almost zero, but
single digit carb)
If you define your "Carb" as "Carb Foods minus above 5 items", the answer is
yes, you can eat zero carb food and still be healthy.
