Well, I can give you the ingredients, but every time I've made it, I've
winged it, so I don't have exact amounts. Next time I make some, I
will keep track of the quantities. I wanted to do that anyway to make
it easier.
Here's what I use:
Bacon, Couple strips
Butter
Celery, Onion, Carrot
Mushrooms
Bell's Poultry Seasoning
Bay Leaf
Ground Pepper
Chicken Base
Chicken Bullion or Water
Turkey drippings (if available)
1 egg
Loaf of LC bread, allowed to dry out overnight
I start by frying a couple strips of bacon, then remove, and dice it.
To the bacon fat add the celery, onion, carrots and bay leaf. (I use
more celery since it's lower carb.) Also add the mushrooms if using
fresh ones, or wait till later if using canned. Cook until they soften
up. Add butter, Bell's Seasoning (I like to use quite a bit of this),
Turkey pan drippings, Chicken Base and either water or chicken broth.
(A little less chicken base if using broth.) No need to add salt, as
the chicken base has plenty.
Allow all this to simmer for about 10-15 mins. Basicly you want a
mixture that is around 1/4 butter, the rest the water/broth. Again, I
don;'t have exact amounts, but this stuff should be fairly intense,
like concentrated soup, not watery. The bread should be dried out
overnight so that it's dry, but not completely hard. Cut it into 1/2
cubes and add into the mix together with the egg. This is where
exact amounts would help, as you want to add enough to get the proper
consistency. Mix, but don't overdo it, as you don't want to break it
down. Remove from heat and let sit for 15 mins+ before serving.
I don't have the carb count, but obviously the main thing here is the
LC bread.
