It's artichoke Season! 10/$10 at Safeway
I bought a couple. They are low in cals and you can deduct about half
the carbs in fiber. I have loved them since I was a kid. I dip mine in
a bit of diet Miracle Whip and then fill the heart after II scrape the
meaty stuff off ( one at a time) off the leaves with my teeth. My Dad
taught me to eat them upside down and scrape the meat off the leave
with a pulling motion over your bottom front teeth. The farther in you
get the more flesh and the more tender the meat becomes. I steam mine
about 1/2 hour with the lid on after cutting the stem and trimming off
the small tough outer bottom leaves. When you get to the middle and the
leaves are not longer firm and meatybut rather transparent and limp,
pull the excess off, scoop out the stuff that will "choke ya"( furry
looking stuff) and eat!! They are delish cold too. You can dip them in
lemon butter, garlic butter, mayo, or a dressing of choice. They are
laborous eating but FUN!

You do realize that diet Miracle Whip is reduced in fat and contains
added sugars, don't you? In other words it is significantly higher in
carbs than regular.

I just picked up a fantastic artichoke tapanade from Peru at Costco.
It's a spread made of artichokes and it's absolutely fantastic as well
as low carb. One of those things that you see there once in awhile,
but usually doesn't last long!

I used to buy one at Costco here. It is a dip and you can heat it and
comes in a deep tub like cottage cheese. Its Parmesan cheese, artichoke
hearts, and spinach. It was wonderful and LC but too fatty for me now
but I used to brown chicken tenderloins in olive oil and garlic, lay
them on a bed of italian seasoned chopped tomatoes that had been
drained well, top each tenderloin with a dollup of the cold dip and put
in the oven until the dip had melted, browned and got all bubbly. It
was one of my soon to be 8 year old favorite food.

I know the one you mean. It's a dip type thing in the refrigerated
section at Costco that they have had for some time. The new tapanade
is in the pickels, olives, etc section and comes in a jar. Its just
ground artichokes, some oil, vinegar, spices, etc, no cheese, so it
should be much lower fat and calories. It also tastes better!

Yep and when I have to weigh fat against sugars in a situation like
this so I choose less fat. I don't use but more than 2 Tablespoons if
that so its neglible in my book. I dont process fat or sugar like I
used to and I tolerate fats miserably. Its weird. I dont tolerate eggs
of anykind even the egg beaters, no butter, oil, mayo etc. Makes me
sick as in remember when you were a kid and you ate too much candy and
your belly felt bloated and sloshy?? Maybe nauseous? Fat and sugar
makes me feel icky. Its a good thing really though. I can look at
donuts and think " Oh gawd they look good but getting sick just wouldnt
be worth it and I couldnt eat the whole thing anyway so WHY BOTHER!!!!2
little oreo cookies would tip me over the edge. Yes I have tested
myself to see what my boundries are but I have the wonderful constant
reminder I signed up for. Truly is a wonderful thing LOL!!!!
I have a hard time with dressing too. The low cal dressings are higher
in carbs because of the sugars and they are low in fat but the low in
sugar dressings are high in fat. I have settled on a couple flavors of
Wish Bone "Just 2 Good" low cal dressing especially Italian as it is
low in cals and 4 carbs a serving and tastes great. While it is higher
in carbs it isnt in fat, has good flavor so I do take a few extra carbs
rather than the fat.

Artichokes are also very high in soluble fiber. IIRC, they have the
highest amount of soluble fiber of any food.
Just a little info for people who keep track of such things.

The foods that are highest in soluble fiber are artichokes and apples.
There are a few others that are quite high, but artichokes win.
(Is Fiber 1 a "food"? Or is it a manufactured product?)

I buy them every time they're on sale. For me, an artichoke is a meal
in itself.
I nuke them with a couple TB of water for 8 minutes and then eat them
dipped in melted butter.
Mmmm...
