Interesting article, thanks for the post. Overall positive and another
example of how LC has worked.
Here are some comments:
"Flying in the face of guidelines set by the American Diabetes
Association (and, by extension, the Canadian Diabetes Association), the
72-year-old advocates a radical decrease in blood-sugar levels through
major carb-cutting. So major in fact, that one could say Dr. Bernstein
"out-Atkins" Atkins, recommending a sustained ultralow-carb diet,
rather than easing diabetics off and back onto their bread baskets."
Though the author has suceeded at LC on Bernstein's diet, the author
obviously doesn't understand Atkins, as I don't think anyone here would
say that the ATkins plan eases anyone off and then back onto their
bread baskets.
"But Dr. Harris adds that people develop strong cravings while on
diets, and that it takes incredible willpower to overcome them in the
long run. Ultimately, he thinks Dr. Bernstein's approach is impractical
for most people. "
Ironic that Dr. Harris thinks people on LC are going to fail due to
cravings. Most of us here know that exactly the opposite is true.
Stay LC and the cravings are under control. Start eating too many
carbs and the cravings for carbs return.

Dr. Harris speaks without any real-life experience. He expects people to
believe him because he is a "doctor.". So much for "experts."

Yet another cheesecake
8 oz Neufchatel cream cheese 6.64 g
3/4 cup Splenda (I don't have the splenda figures!)
1 cup sour cream 9.82
4 eggs 1.54
2 teaspoons vanilla 1.06
19.06 (plus whatever the splenda is)
Before you start:
On the lower shelf of a cold oven, put a large pyrex dish, and add
several cups of water. Preheat oven to 325.
Measure out a sheet of parchment paper to ft in your pie pan or
casserole. (A single sheet works fine for a pie pan. A casserole
works best with a round sheet cut to fit along the bottom, and a
separate piece lining the sides.)
Now you cook:
BEAT Neufchatel cheese, cream cheese, splenda and vanilla in large bowl
with electric mixer on medium speed until well blended. Add sour cream;
mix well. Add eggs, 1 at a time, mixing on low speed after each addition
just until blended. IF YOU OVERMIX when adding the eggs, IT WILL CRACK.
Pour into prepared pan.Pour mixture into a pie pan or casserole. Bake at
325F for 55 minutes. Turn off oven. Let cool. (This should prevent
cracking.)
Stuff you can do:
Add Davinci syrups for flavor
Make a crust of 1/2 c ground nuts (macadamia or almond with a bit of
butter and cinnamon.) If you do this, you'll love the parchment paper
even more. I admit i prefer it without a crust.
Add amaretto (almond) instead of vanilla
Add berries. (I prefer it without.)

Splenda has 16 carbs/cup.
