Actually it's getting very close to the New Year! I am having friends over
for dinner and champagne on New Year's Eve - lobster or shrimp scampi
(depending on what's at the market), asparagus, salad, and cheesecake for
dessert (lc of course). I'm preparing the orange-flavored one with a
pecan/flaxseed crust (tastes like graham crackers only better) with
Splenda-sweetened sliced strawberries as a topping.

Then for New Year's Day I'm making up my specialty - ham hash made with
cubed ham, cauliflower, onions, minced red bell pepper, sliced pickled
jalepeno peppers, topped with plenty of grated cheddar cheese. It's *really*
homely and good, looks good in a chafing dish, and really only needs a salad
as accompaniment. The grandson will pick out the jalapenos, but loves this
dish. I'm having people just stop by, so will have some corn bread and
cookies for the non-lc'ers.

So... is anyone else planning anything interesting?

Your ham hash sounds similar to my adaptation of Nasi Goreng, this is the
original recipe, I substitute cooked and chopped up cauliflower.  Nice way
to use up leftover ham.  The cheese on top sounds good, I may add that next
time.

CHILI FRIED RICE WITH HAM (NASI GORENG)

Nasi goreng, which is Indonesian for fried rice, is a staple in Indonesia.
It's delicious on its own for lunch or as a side dish for an Asian-style
dinner.

6 tablespoons (3/4 stick) butter
3 eggs, beaten to blend
1 small onion, chopped
2 large garlic cloves, minced
1 carrot, chopped
1 green bell pepper, chopped
1 jalapeño chili, seeded, minced
3/4 teaspoon ground coriander
3/4 teaspoon caraway seeds
3 1/2 cups cold cooked rice
1 cup chopped ham
Melt 1 tablespoon butter in heavy medium skillet over medium heat. Add eggs
and cook until omelet is set and golden brown. Remove from heat and cool
completely. Cut into small pieces.
Melt remaining 5 tablespoons butter in heavy large skillet over high heat.
Add onion and garlic and cook until onion is golden brown, stirring
constantly, about 3 minutes. Add carrot and next 4 ingredients. Reduce heat
to medium and cook until carrot is tender, stirring occasionally, about 6
minutes. Add omelet, rice and ham. Stir until mixture is heated through,
about 5 minutes. Season omelet to taste with salt and pepper and serve.
Serves 4.

Oh, wow! Thanks! That is a definite keeper recipe! Thank you. Yes it does
sound similar. I got my simpler recipe from a lc AOL group, I think, years
back. It was one of those recipes that you think, "Ho hum, sounds ok and I
have all this ham left over...," and then you make it and it is *sooooooo*
good. I love it when that happens. The ham-cauliflower combo is just great,
isn't it?

This sounds a bit more exotic and interesting... cannot wait to try it!
