I am not the expert on this, but the fact that it's very fresh and
organic has no effect on the other fact... it's carbodydrate-dense
wheat, which, as you say, is linked to weight gain and increase in
small LDL particles.
There are probably better ways to get your fiber.

I am trying to find some documentation on this...the relationship
between wheat germ and small ldl. Wheat germ is known to reduce total
cholesterol. Can you cite any source on your statement that wheat germ
increases small ldl?

My statement referred to yours!
My guess is that you will be unable to find any source that
specifically links wheat germ, and only wheat germ, to changes in LDL.
There are, of course, a broad range of sources that suggest that high
carb diets (which tend to contain wheat) lead to (occasionally) lower
LDL but smaller particle size, and you're clearly already aware of
them.
