I buy soy noodles from a local Asian grocer and they state they are 7
g carbs per serving (2 servings per package) -  and 7grams fiber.  Has
anyone tried these before? I think they are just awesome but question
the claims of zero (or near zero) carbs for final count....here are a
couple pics I took of the packaging

I usually stir fry these in a wok with some low sodium soy sauce,
green peppers, onion and some thinly sliced beef or chicken.....really
incredible and yummy - one package is good for two meals - so anyone
have info on these?

Thanks for the link. I have not tried those noodles, but I will look for
them in the store.  Tomorrow, I am going to the Sunshine Health Foods
store, to buy Shirataki noodles for my husband. They have 3g of carbs
and 2g of fiber, per serving.

The health food store was sold out, so I went to the Drug Emporium, and
they had them ($1.50, 2 servings).  I used these noodles in a Vietnamese
soup called Pho.  The noodles tasted fine, but they had just a little
bit of a rubbery texture to them.  It is hard to describe.  In Pho they
were okay, but I think I would like these noodles better with spaghetti.
They also had fettuccine.

It's not hard to describe, they have the texture of rubberbands.

... or earthworms....

Hmmm, are they really soy?   Earthworms would be low carb.  ;)

I suppose you'd know from experience?

When I had Mexican neighbors they called it Menudo.  ;^)

You are right. LOL  We bought some more shirataki noodles today, because
my husband wants to try them in spaghetti.  He likes them!

I think the cheese has slipped off his cracker.

LOL... great expression.

Have  him try Nutrition Kitchen golden soybean pasta.  Much better.

If your grocery or HFS doesn't have it, you can get it at netrition.com
or some other low carb online seller.

I found that boiling them for 15-20 minutes instead of the few minutes
it says on the bag makes them less rubbery.  Putting them in the sauce
toward the end of cooking it helps too.

Thanks for the tip, I will try boiling them, first. I will also add them
to the sauce, towards the end of cooking.

Since some labels prededuct fiber and some don't,
let's run the numbers on the label to see which
apply in this case.  According to the label: -

Step 1, carbs per serving:

Calories 200
Minus calories from fat 200 - 90 = 110
Protein 20g * 4 = 80 cal
Minus calories from protein 110 - 80 = 30
Fiber 7g * 4 = 28 cal
Minus calories from fiber 30 - 28 = 2.

The claim is "Sugars less than 1g" and the
calories are 2.  That would mean there is 0.5
gram of net carb per serving.

Step 2, carbs per package:

Servings per container 2
2 carb calories per serving * 2 servings = 4 cal
4 cal / 4 = 1 gram

The conclusion is if you use the bag as your serving
it counts as 1 carb gram.

I tend to get shirataki noodles.  Their numbers work
out the same way.  Very close to zero, but they get to
zero by chosing serving sizes carefully so they can
round down to zero from 0.5 gram.  Still, these noodles
are lower carb than brocolli.
