It would be pretty hard to make a low carb juice, I think. Most of
the standard things that you juice... even things like carrots... are
relatively high-carb.

That and juicing removes the fiber and fiber is beneficial.
Generally not the thing to do with low carb.
But then again I have no intention of saying anything bad
about V8 and it's juice. Clearly in at least one case
juicing veggies works fine for low carb. So DRA I suggest
variations on the veggies in V8 if you're going to juice at
all. Pick the lower carb ones and use more, the higher
carb ones and use less.
I've hard juiced celery and it was fine. No strings but the
chewiness is one of the best parts of celery to me so I
did not bother making it a second time.

I don't know how to make your own juice and doubt it's possible in the
usual definition, but there are certainly lots of good commercial
drinks available that while not actual juices are LC and taste very
good. The Minute Maid Diet Lemonade in the regrigerated section is
excellent. The Ocean Spray Diet Cranberry is very good too, but
rather pricey. Of course, these contain only small amounts of real
juice. You can also make lemonade using moderate amounts of lemon
juice and Splenda. My latest find that I like a lot is Chai Diet Iced
Tea, think it's made by Turkey Hill.
