New to Flax meal and Textured soy: your favorite recipes?

Hi everyone,

I just bought myself an electric coffee grinder. Big deal, right?
Actually, I wanted to try out flax meal recipes  and you cannont find
flax meal where I live. But I can find golden Flax seed quite easily in
organic supermarkets.
So now, I made flax meal on my own, and it is really a great product.
First thing I did is a pizza crust: best LC one ever !

Now I'm discovering textured soy protein.
I could'nt resist tro try and put some in my new grinder. It resulted in
something looking quite like soy flour. I deduced that what was not
tasty in soy flour was the fat. Because I can have Textured soy right
out of the bag, as a snack, but you wouldn't make me eat a spoonfull of
full fat soy flour for the world.

Anyway, I'm searching the web for nice recipies, with ingredients I
could find in western europe.

I thought I could ask what were your favourite recepies with those 2
ingredients (Flax meal and TVP).

Hueyduck, I'd advise searching this newsgroup through groups.google.com, as
there have been many such recipes posted over the years. Googling in general
is also a good strategy.

Personally, I don't use TVP hardly ever. I do like to use ground flaxseed in
my breakfast shakes - makes them really thick, plus adds EFAs and fiber
without any real taste. I also sometimes grind a few big spoonfuls and add
to ground beef and other ingredients for meatloaf.

As I said, I did this already ;-) I haven't spent too much time googling
the newsgroup, though.
I actually found  some ideas.

But most of the  recipie using TVP are  vegan non LC  ones.

As for Flax meal recipies , there are , most of the time,  "hard to
find" ingredients  in the recipies. (hard to find in western europe,
that is)

That's an original and simple idea. I'll try this.

I started qith this recipie:

but I made it my own :

- 175g golden flax meal
- 25g pure gluten powder
- 8g dry yeast (reactivated in 2 tbs of tepid water qith a pinch of sugar )
- 3 medium eggs
- 17g olive oil
- the equivalent of a tbsp of sugar (splenda, for instance).
- 1 pack of leavening powder
- salt to taste

As little water as needed. No water worked for me.

Mix the dry ingredients, then mix qith the liquid ingredients.
The dough quickly becomes hard to manipulate, quite sticky.
Put the dough in  the middle of the oven  cooking surface and spread it
with the back of a spoon until it has the desired surface and thickness
(about 0.5cm)

Let the dough breath a little in a warm and moist place and go on with a
regular pizza recipe.

I think oregano would be nice but I hadn't any at the time I came up
with this recipe.

I used this to make a flammekueche as well. Basically, you just garnish
a thin pizza crust with cream, minced onions ans lardons (little bits of
bacon).
Quite a succesS.

Sounds like a great recipe, Huey.  My husband can not have gluten, so we
make our pizza's without a crust.

Here is a recipe from one of my friends.

Crustless Pizza

4 oz. cream cheese (room temp.)
4 large eggs
1/3 cup heavy whipping cream
¼ cup grated parmesan cheese
1 tablespoon finely chopped fresh onion
½ teaspoon minced garlic
½ teaspoon dried oregano or Italian seasoning
4 cups shredded Italian Blend cheese (or mozzarella)
½ cup pizza sauce
Pizza toppings (whatever you like)

Preheat oven to 350F.
Grease a 9x13 metal baking pan (can use Pam spray)

Blend together until smooth the cream cheese, eggs, cream, parmesan
cheese, onion, garlic, and oregano.

Scatter 3 cups of the shredded cheese in the bottom of the prepared
pan. Pour the egg mixture over the cheese and bake for 30 mins.

Remove from oven and spread with the pizza sauce. Scatter your pizza
toppings over the top, the cover with the remaining 1 cup of shredded
cheese.

Turn on broiler and broil about 6 inches from the heat until brown
and bubbly. Let sit for 5 minutes or so before cutting.

Makes 6 servings.

Actually, I tried it again yesterday, but without gluten. I had added it
more by habit than by need.
It worked perfectly. Actually the recipie could be shortened by quite a bit:
 Mix eggs with flaxmeal and  salt+leavening agents until you get a
sticky dough. Spread with the back of a spoon until it's thin enough. Et
voilà! ;-)
That's what I did yesterday.

Sounds good.

My doctor thinks flaxseed oil and flaxseed meal should be added to
everyone's diet. I know it has omega-3 fatty acids, but I am not sure
what else it can do for me.  She believes everyone would live a longer
and happier life, if they just added flaxseed to their diets.
