Dinner tonight

I topped a dinner plate full of mixed spring greens with a serving of
this recipe, which I halved to start with and left the beans out of, and
then put about a third of  atop my greens:

Then I boiled up some extra large shrimp with tails on in Bookbinder's
shrimp and crab boil seasoning and cooled them, put them on top,
sprinkled with a few roasted pumpkin seeds.

The guacamole salad and some of it's juices was enough for the whole
thing for me.  Very filling, fresh and cool for summer.

Fitday puts the totals at:  Cal:  335, Carbs 13.9 (5.02 fiber), fat,
21.9, protein 24.  Approximations from fitday totals.

I started with a bed of spinach (I don't use lettuce for salads any
more) then added grape tomatoes, chicken, a hard-boiled egg, pepper
jack cheese, raw zuccini, bacon bits, topped it with my
second-favorite salad dressing (Kraft three-cheese ranch) and then
topped that with a sprinkling of bacon bits.  Crunchy goodness!

BTW, my favorite salad dressing is Kraft cucumber ranch dressing, but
lately I can't find it locally.

I use a bed of sauteed spinach in place of pasta with a lot of dishes.
My salad isn't all lettuces; it's a variety of very colorful greens.

The only non home made dressing I use is Brianna's.  But mostly, I just
use balsamic vinegar alone because I can't afford dressing calories, or
I'd add a bit of olive oil.  And my husband likes Rao's roasted garlic
vinaigrette.

Our summer meals are often salads with the works on top similar to
yours.  One I love to make is marinated, grilled chicken plopped on top
of goat cheese medallions on top of a plate of greens.  The cheese gets
all warm and creamy and helps dress the salad and flavor the chicken.

I'm on more of a South Beach type regimen these days since my eating
has been complicated by a large gallstone and I can only eat fat in
moderation.  So my carbs are higher and fat lower than I used to eat

Having said that, for dinner tonight:  

I bought a whole, hot rotisserie chicken fresh out of the oven at a
local supermarket (YUM!) and made two sandwiches with sugar-free,

breast, provolone cheese from the deli, Duke's (sugar-free) mayo,
Smart balance buttery spread (1/2 real butter, 1/2 high-omega fat
oils), and piles of fresh kos lettuce.

I also use FitDay, and this meal was
  Net Carbs: 23g
    Fat:          55g
    Protein:    56g
    Calories:  811

It was close to a perfect balance for my WOE.  I ate a very light
lunch of chicken, green beans and salad veggies.   My totals for the
day for all the macronutrients were close enough to  my parameters.
    Net carbs:  57g
    Fat:             76g
    Protein:       90g
    Calories:   1272
   
The fat was a tad high; I have to watch it more.  I never want to go
through the excruciating pain of anther severe gall bladder attack
like I had last March.  (They cannot operate on it now because of the
risk of bleeding from a blood-thinning med that I take).

I also take a few supplements and, according to FitDay, I always get
more than the RDA/AI of all the micronutrients that I need each day.
Overall it was a good day for me.  I follow a controlled-carb diet
mainly for the health benefits these days, but I might just wake up a
little skinnier tomorrow also.   :-)

Peter, your meal sounds delicious and I'm so jealous; that was my entire
calorie count for a whole day, give or take 100 cals!
