The 4 phases of the Atkins process to generate your own customized
eating plan:

http://www.atkins.com/Program/ProgramOverview.aspx

The latest book in the Atkins series is by doctors moving the plan
forward:

Drs Eades wrote the Protein Power series.  Here's the edition I liked
best:

ce&n=283155

And their program:

You asked about hearth health.  The book for that would be the one with
"health healthy" in its name by another couple of good doctors with much
expertese in the low carb realm:

The site for Drs Heller:

And the survey to see if their plan type is likely to apply to you:

You might look at
The Paleo Diet: Lose Weight and Get Healthy by Eating the Food You Were
Designed to Eat [Paperback] by Loren Cordain

<http://www.amazon.com/Paleo-Diet-Weight-Healthy-Designed/dp/0471267554/r
ef=sr_1_1?s=books&ie=UTF8&qid=1279213703&sr=1-1>

Available, I'm sure, at a library near you.

If you go to the Amazon site, they will have other recommendations as
well.

The there is a google search for Paleo recipes (a little counter
intuitive, recipes?)
<http://www.google.com/search?client=safari&rls=en&q=paleo+diet+recipes&i
e=UTF-8&oe=UTF-8>

or the google search for Paleo foods
<http://www.google.com/search?client=safari&rls=en&q=paleo+diet+food+list
&ie=UTF-8&oe=UTF-8>

You'll probably want to see "Sugar: The Bitter Truth" as well
<http://www.uctv.tv/search-details.aspx?showID=16717>

IIRC, the lecturer, Robert H. Lustig, MD, UCSF Professor of Pediatrics
in the Division of Endocrinology, says, flat out, that modern medical
problems related to diet, would disappear on a Paleo diet.

Good Luck,

Also http://www.neanderthin.com/ for Ray Audette's book NeanderThin.
Each of the paleolithic programs is slightly different from the others.
Ray Audette suggests a random exercise program.  Among other things he
recommends falconry.  That must by fun for someone who can manage it.
