Low-Carb Veggie Stuff?

I am trying to dig up information on low-carbing for vegetarians.  So
far, I've found the obvious things.  Tofu, soy protein, and Quorn.
And for vegetarians who aren't afraid of animal products: eggs,
cheeses, Macadamias, and certain dairy products.  And of course,
low-carb vegetables like sprouts.

Is there anything else I should be aware of?  Seems like vegetarians
have it much harder than the rest of us.

Here's the acceptable induction foods list from the atkins website. Scroll
down for a long list of veggies. Not sure how you'll satisfy the fat part of
the diet, but good luck.

What animal does the macadamia come from?  And what part of the
macadamia do you eat?  The nuts?

macadamia nuts are an animal product?

I am vegan and am also trying to go low-carbs, so I understand your
situation well. r+p rosie offered this link for me, which also contains

If you use the Atkins list, be sure not to say you're doing Atkins, though.
Some people 'round these parts have a problem with that.  ;)

You can add other nuts, especially walnuts.
