I'm trying to figure out the amount of carbs in brewed coffee made with tap
water. (Hubby is a coffe-a-holic)
I went to the USDA database and it says 0 per 8 fl oz but I have a really
hard time believing that....
Anyone know better?

I don't know for sure, but its probably correct. Coffee is usually not
recommended during induction since caffeine may spike your insulin.

Atkins says 1 gram carbs per 8 oz. for brewed coffee (regular and
decaf both.)
For instant coffee, 1 Tb. of the powder = 2.1 grams, or 1 tsp = .7
gram.

The USDA changed it a few months ago. It used to say almost 1 gram per
cup. When they changed it, I did some poking around and found out they
don't do the testing themselves, but rely on the food industry to tell
them what the carb count is. The change came right around the time the
studies came out vendicating lowcarb-- and the industry smelled a new
market.

This is a sad and scary thing. I used to rely on the USDA database to be one
place I could get accurate information, and now I can't trust it at all
anymore. *Lots* of items suddenly show as zero now that used to reflect
hidden carbs. :-(
