REC: Green Beans w/Bacon & Bleu Cheese

This was so easy I'm surprised I never thought of it before.

I always just buy the Trader Joe's green beans in the microwaveable pack (I
love that) ... and by default I always microwave my bacon (pure laziness on my
part) ... anyway ... after microwaving my bacon yesterday for lunch, I thought
"It's a shame to always just dump out this delicious bacon grease."

I microwaved my green beans, added them to the bacon greased plate, and tossed
... added some black pepper and crumbled bleu cheese ... and had the BEST green
beans ever.  I mean, I like bacon and bleu cheese on a burger, why not on my
beans?

In my pre-LC days, I used to enjoy Bird's Eye International Green Beans
and Spaetzle.

Now that I'm LC, I cook the plain green beans, and then add lots of
butter and Hormel's Bacon Pieces -- real crumbled, cooked bacon in a
jar.  I don't miss the spaetzle at all!

THAT sounds good, too!!! LOL I love that phrase, though "Now that I'm LC" ...
last night I was eating some cold barbecued pork loin with onion dip ... I told
my mom "Who needs chips or bread?"

I've discovered that pork rinds can be better than chips.  I've been
dipping them into T.G.I.F's Spinach, Artichoke, and Cheese dip.  Look
for it in the freezer section of a supermarket near you . . .

The longer I go without chips and bread (except for Atkins Traditional
Rye, which I have occasionally), the less I want it.

We have bagels with cream cheese delivered to our office every Tuesday
morning.  It's been 7 months since I've had one.  Every Tuesday morning
I go into the kitchen to refill my water bottle, and I see the bagels
sitting there -- all doughy and pasty and heavy.  I don't even think
about eating one.  Sometimes I think "I can't believe I used to eat
those things."  

It's just like when I quit smoking the last time -- the time that
"took."  After a few months off cigarettes, I would smell someone who'd
just smoked one and would think "I can't believe I used to do that.  
What was I thinking?"

The blue cheese and bacon sounds like a nice change. Usually I just toss them
with olive oil and maybe a little garlic. I do love TJ's green beans--I can't
figure out exactly why they should taste so much better than any other frozen
beans, but they do!
