I drove down to Trader Joe's today and found no Bella Vita pasta on the
shelves. I asked the store manager what was up, and he told me that they
would not be back in stock until March 1, because the company had to comply
with "substantiating" their labels which required testing and what he called
"reformulation."
I asked him, "Does this mean the labels were inaccurate?" He weaseled
around, but pretty much said that inaccurate labeling was a huge problem
with all the low carb products they stock and that when they get the Bella
Vita back in stock the labels will be accurate.
This gives me a lot more faith in Trader Joes, but it makes me think that
the pasta probably was not as low carb as the label claimed. The problem
with pasta is that even with high carb normal pasta you have to test it many
hours after eating it to see any blood sugar spike because it takes a long
time to digest. So my usual 2 hour test wouldn't be completely informative.
Oh well. I was eating so much junk around the holidays that five or ten more
grams of carbs weren't going to make a significant difference. I'll be
curious to see what the new labels say. Even 20 gram pasta would be an
improvement, since you can enjoy half a serving of the Bella Vita (which is
what I was eating).

The good news is that I bought a case, so no problems running out.
The bad news is the reformulated carb count - making me very nervous!
