Hi Steve!
Glad to see that you found the wonders of the squash!!1Where I live they
cost about 7-8 dollars each and yes this summer I do plan to try and grow a
few! My absolute favorite and a real comfort meal is zuchini cut into
fettucine like strips(or just slice) with ground beef and alfredo sauce.My
non lo carb friens always ask me for tastes and love it.

P.S. not only because of the expense but spaghetti sauce makes things
well....gassy!

I just made spaghetti squash, cooked it like home fries: nuke it in microwave
untill you can cut it in half (poke holes in it first!). Scoop out seeds, then
use a fork to unleash all the spaghetti "strings".
Saute spaghetti strings in olive oil with onion, parmesan cheese, red pepper,
what ever.
It was gooood.

I don't have any recipes, per se, but I pretty much use it anywhere
I'd use spaghetti. With spaghetti sauce, cream sauce, whatever. I also
like it with butter, parmesan, and garlic salt.

I have kept it up to a week in the fridge after it is cooked. My favorite
is some frozen shrimp and scallops, cook just until done, pour on a can of
Alfredo sauce, heat and pour over the cooked spaghetti squash. Top with
toasted pine nuts if you like them, I think they are wonderful but my SO
picked them all off when I served them. He is not a low carber as he has
never been overweight, but loves all my low carb dishes. I think he is a
moderate carber by nature as he has never been a bread or dessert eater. I
do have to give him some potatoes or rice once in a while to keep him from
getting too thin. He also isn't much of a between-meals snacker although he
does like my pork rinds!

I saw that everyone had posted dinner type savory ideas for this. A
while back I tried a sweet recipe that harnessed the sweet side of the
squash to make it into a sweet side dish. I usually bring it to
family gatherings where it disappears! (and I'm the only low carber!!)

This one is sooo good! I add a little garlic and my fav dried seasonings
like thyme and rosemary.
2 cups cooked spaghetti squash -- (2 to 3 pounder)
1 pound lean ground beef -- cooked and drained
2 cups fresh mushrooms
1 small onion -- diced
2 cups your favorite lo carb spaghetti sauce -- or canned tomatoes
2 cups grated cheese
Saut? mushrooms and onion in 1 tbsp butter. Combine all ingredients and top
with cheese. Bake
at 350 for 30 minutes or until cheese is browned.
