Vegetable Chili

1 tsp oil
1 large onion, chopped
2 medium carrots, sliced
1 c celery, sliced diagonally
1 medium zucchini, quartered
2 cloves of garlic, chopped
1 red or green pepper
1 Jalapeno pepper
1 28 oz can chopped tomatoes
1 Tbsp. chili powder
1 tsp. cumin
1 tsp. oregano
1 tsp. salt
1 tsp. pepper
1 pinch sugar
Shredded Mozzarella

Saute onion, carrots and celery until limp. Do not brown. Add rest of
ingredients, except mozzarella, cover and simmer until done. May need to
add a little tomato juice or water if it gets too thick. Serve sprinkled
with mozzarella.

This sounds lovely, but is pretty carby for low-carbers in some phases
of the diet.
