Some recipes:
SAUSAGE BREAKFAST CASSEROLE
1 lb breakfast sausage
1/2 cup peppers
1/2 cup onions
18 eggs
1/2 cup heavy cream
2 cups shredded cheddar
Cook sausage in frying pan, when almost done add peppers and
onion. Drain and place in large casserole. Beat eggs with cream and
pour over sausage mixture. Top with cheese.
Makes 6 servings containing 43 g protein and 4.5 g carb
each.
PIZZA
2 lbs Italian sausage
1/2 jar mushroom spaghetti sauce
3.5 oz sliced pepperoni
1/2 cup peppers
1/2 cup onions
2 cups shredded part-skim mozzarella
Remove sausage from casing and press down on small cookie
sheet. Bake at 350 until cooked, then drain off grease. Cover with
spagehtti sauce, peppers, onions, pepperoni, then top with mozzarella
and return to oven until cheese is well melted.
Makes 6 servings containing 26 g protein and 13 g carb
each..
TACO SALAD
1 head iceberg lettuce
1 head bibb, Boston or butterhead type lettuce
2 cups onions, chopped (divided)
1/2 large tomato, chopped
1 tsp chili powder
1 tsp basil
2 TB oregano
1 tsp freshly ground pepper
5 cloves garlic, minced
4 lbs hamburger
2 cups shredded cheddar
2 cups sour cream
Tear apart both heads of lettuce into bite-size pieces. Mix
lettuce with 1 cup of the onions and the tomatoes and place in large
bowl. In a large dutch oven, mix the herbs with 1 cup water, then
crumble the hamburger in and the rest of the onion and mix. Cook over
medium-high heat, stirring occassionally, until thoroughly cooked.
Drain and place on top of salad. Sprinkle cheddar over top of hot
meat so it melts in a bit; top with sour cream.
Makes 8 servings containing 48 g protein and 10 g carb each.
These work well with non-dieting family members too, serve the
breakfast casserole with toast, make a second pizza with a regular
crust, and add tortillas, taco shells or fritos to the taco salad for
non-dieters.

I made this in a 9 by 13 cake pan.
And yeah, I *did* put it in the oven for a while. ;)
I'm not actually sure how long as I was doing a few other things in
the kitchen at once, just kept checking until a knife in the middle
came out clean. I baked it at 350 and the cheese was not burnt by the
time the eggs were cooked through.

Yes rosie, it's 3 eggs per serving. I have chickens who lay enough to
keep me swamped with eggs, but not enough to really sell the excess,
so I have to get creative. ;)
And no, Roger, sorry, I don't have the fat or calorie info... I am
only tracking protein and carb myself right now.
