I am new and just don't understand the net carb numbers. How do I discount
the other carbs when they are there and just count the grams that are net
carb?

net carb is easy:
Take the total carbs, and subtract dietary fiber. The number left is the net
impact carbs.
Things like Atkins bars, and protein power bars contain things like malitol
and sucralose which don't count towards carb counts, so the packaging looks
confusing, but in the end it is the same idea, you are subtracting things
that your body doesn't "see" as carbs.
Since most foods do not contain malitol, etc etc, just worry for now about
dietary fiber.
Since dietary fiber is not digested by your body, you can take these carbs
off of the carb count.

just to be clear, do count sugar alcohols as carbs.
They are carbs and they have calories.
If in doubt, count it as a carb
