If I make up a bunch of salad with all of the acceptable "salad
veggies" - lettuce, cucumber, bell pepper etc., and then just scoop
out my daily 3 cups...how many carbs should I be counting? I don't
want to have to measure each item that is in each scoop. Can anyone
help? Just trying to figure out a reasonable carb count per cup.

you can figure it out by measuring the total that you put into the salad
and then dividing that by how many servings you get out of it.
