Very basic question

In considering a low carb diet, aprox what should
the daily breakdown be of carbs, fats, proteins,
fruits and veggies etc...

Have made changes to the types of carbs im eating
(better whole grains and wheat vs enriched white
items) and have also reduced portions almost in
half of those items, yet if I sit down and add up
a typical day of food, what percentages of carbs
should my diet break down to show to live truly by
definition of a low carb way of life eating plan.

I know this is a very general question but just
curious once I add up a typical days foods if I am
even close to these basic guidelines of lower carb
eating.

Please read the FAQ's. If you're on Atkins, the number of carb grams
depends on what stage you're on, your "metabolic resistance," and
whether or not you're doing exercise.

The usual threshold for low carb is usually under 100 g. carb /day. People
who are following one of the plans such as Atkins or Protein Power
typically go lower than that.

If I were going to give percentages that many people here aim for, I'd say
5% carb, 20% protein and the remaining 75% of your calories from fat.

But there's no reason you have to aim for that.

anything less than 100g of carbohydrate per day is generally considered
to be a ketogenic (low carb) diet.  

percentages are going to vary depending on what you eat, but i find that
when i am at or around 100g of carbs a day (which is what i shoot for) i
am usually getting about 50 percent of calories from fat with the rest
split pretty evenly between protein and carbs.
