Well, I tried this for the first time. I am still dumbfounded that I didn't
have this years ago. Kind of strange considering I try almost everything
under the sun. Anyway, I cut it in half, seeded it and put a half in
boiling water covered for 20 min. Then took it out and used a fork to get
all the spaghetti like squash out. Set that on a plate and topped it with
Italian hot sausage and red sauce with peppers. I gotta tell you....it was
outstanding. Kind of has a little bit of sweetness to it compared to pasta,
and really better in many ways. Very tender and has a nice texture.
The squash was 1.49 a lb and I would get 4 large servings out of the small
one I got. It isn't that cheap, but what the heck.
I will be having this on my diet more often. I am sure most of you all have
had it, but I just had to share it with someone. May not be good for
induction, but I am being a little lax this week. I find I don't have to
get too crazy the first week back or so and then will need to get strict.

Hola,
I love my spaguetti squash with extra virgin olive oil, garlic and parsley... simple, basic and good. I eat it as a side to chicken or shrimp "A la crema".

Mmmmm that does sound good. I've got 4 more days on induction and I
may try it the following week if I decide to go off induction. I've
never had spaghhetti quash before.

Put some homemade alfredo sauce on it( melt one tablespoon of butter
in pan, stir in 1 Cup of heavy cream, let come to a boil, add 1 1/2
cups parmesan cheese and a clove of crushed garlic, stir until cheese
melts, then add another tablespoon or 2 of butter and allow it to melt
and VOILA!!!!)pour it over your steamed or boiled shredded squash and
have a piece of grilled chicken too YUM!!!! I also made it the other
night by turning it upside down in some water in a square glass baking
dish and microwaved it, I then sprinkled it with a pinch of salt and
brown suager twin and drenched it in butter! OH YEAH!
