I have so much energy today. Maybe it is because I am excited about starting
again, but I think it is because of the lack of carbs. Had fried eggs,
cheese, pepperoni, my own clam "chowder" sans the potatoes, sugar free lemon
Jell-O.  And I am feeling great!!

Isn't that a great feeling, Patty?  I love the extra energy I get from
Atkins, too.

I love a 'low-carb' clam chowder recipe.  Would you share?

Well it is not really a recipe. I think everyone who grows up on the New
England coast makes chowder. I think it is taught in preschool. What I do is
score some salt pork and fry it some so that the pot gets some fat in it.
Add chopped onions to it and cook until clear. I add about a quart of fresh
shucked chopped clams and the juices. It is cheating but I buy them this way
at the seafood dept. at the grocery. I add some clam broth and about a quart
or so of cream.  You can add celery too but I prefer not to. Bring it just
to a boil. I simmer it until I can't stand smelling it much more and I grab
a bowl. (By this time it is all cooked, I never time anything sorry) Be sure
to throw away the saltpork at this point, cause it ain't pretty. Add some
pepper and butter to the bowl. YUM

What about adding cauliflower to the chowder for "potatoes"?
