Thanks For Spaghetti Squash Idea

I want to thank whoever the person is that suggested using spaghetti squash
as a pasta sub.....BRILLIANT!
We had spaghetti squash alfredo last night,excellent dish.
This morning I am going to use the leftover to make "hash browns",should be
interesting.

Oh,it is great.
As far as the spaghetti squash "hash browns".....it didn't work out too
well.
I fried it in olive oil but they wouldn't stick together like regular potato
hash browns.
My wife said it was because the squash doesn't have enough starch content
and that I should mix in an egg next time.
It was still good though.

Hey! Try mixing some egg in with it. Ya know kinda like egg foo young.
Egg is a great binder. Maybe some crumbled bacon bits and let cheese
melt on top of it after you fried it. I would bag the olive oil and
use butter for a more salty taste too. I had spaghetti squash again
last night and over cooked it on purpose. I smashed it up a bit and
added butter and some of atkins maple syrup. Was kind of like candied
yams which I loved in my old WOE!!! Laureen
