My mom always told me that when you eat lentils, you must combine them with
a starch to create a "complete protein."  I have read this in other places
too, such as several websites I found before posting this question to the
group.

According to Fitday,  1/2 c. of cooked lentils has about 12 g net carbs and
8 g protein.  This is something I can probably fit into my diet once in a
while, and I would like to because my husband enjoys them, and also because
we have been looking for good side dishes and for vegetarian entree ideas.
We used to eat loads of lentils and rice in our pre-LC days.

Does anybody know anything about this "complete protein" business?  Is it a
waste nutritionally to eat lentils without an accompanying starch?  Is there
something about those 8 g of protein that requires a corresponding 1/2 c. of
rice to be used properly in the body?  And has anyone else incorporated
lentils into their LC life?

thanks,
carla

It's only an issue if you're vegan.  Various starchy foods have the
complementary amino acid "building blocks" that beans and lentils
don't have.  If you're eating animal proteins, you're not lacking those.
Nutrition has to balance out overall, not every single meal individually.

You can read Diet For a Small Planet for more about complete proteins
and legumes. I eat a lot of legumes, myself. My 17 bean-and-bacon soup
is legendary.

I usually eat my lentils or bean soup with a small slice of whole
grain bread and butter. It does make me feel more satisfied. But I'm
very active with a high CCLM, and can afford the extra carbs.

In my opinion, the carbs in lentils ARE probably starch, so why would
anymore need to be added to it, if what you are saying about combining
starch and protein are true.
