Hi. I am new here and new to the low carb diet. Tonight for dinner I made meatloaf with crushed pork rinds instead of bread crumbs. When I first heard of it, I thought...ewwww, gross... but dang if it aint good!!!! Glad I got two bags of pork rinds... one for snack attacks and one for breading lol

Crush them real fine and makes good breading for chicken or fish. Can
season them as you like. Add a little Old Bay seasoning for the fish
coating.

Don't forget they're good for pork chops, too. Especially
the spicy ones.
