bulk Xanthan gum

Anybody know where you can buy bulk xanthan gum by the LB or KG to use
as a thickener?

I can buy it in the natural/organic/health foods section of my supermarket.
You could also check health food stores if you don't want to buy over the
internet.

I've never ordered from any of these vendors, and cannot vouch for
them, but they all offer xanthan gum in larger quantities.  One of
them allows you to order by the ounce.

Little more expensive then I thought it would be at over a buck an
ounce.  I would be tempted to buy a 50 pound bag at a wholesaler but
minimum order is 250 LBS :(

For home use, the small jar (less than 1 lb) that you get at a health
food store will last you several years.

I plan on using the Xanthum gum for home made salad dressings and
figured at least a tablespoon of Xanthum gum per 16 ounce bottle of
dressing would be necessary.

I eat two salads a day so I could easily use over an ounce a week at
that rate.

Try again...1/4 tsp would be a good starting point for a 16 oz bottle of
dressing.

Potent stuff!  Using xanthan gum instead of oil will allow those fat
calories to be used elsewhere.  Thanks for the revision in portion
size!

Just a ditto on Alice's reply.  Xanthan gum is quite powerful.
Depending on the application a mere sprinkle is sometimes sufficient.

50 lbs?  Not unless you plan on chucking it in someone's swimming pool
so they can walk on water.  <G>

Not unless you plan to spread it like jam.  Try half a teaspoon.

Thanks for all replies!  I found some 8 Oz bags at my local HFS.
Package said it contains 25 tablespoons.  I read that Xanthan gum is
not quite as effective as a thickener in acid environments like
vinegar or in cold fluids so I will try a tablespoon to a gallon of
warm vinegar dressing and see what happens.

Using such a small amount, it only costs 6 cents too thicken a 16 oz
bottle of dressing.  Maybe now my dressing will stay on top of the
salad instead of ending up on the plate.
