dressing would be necessary.

Try again...1/4 tsp would be a good starting point for a 16 oz bottle of
dressing.

Potent stuff! Using xanthan gum instead of oil will allow those fat
calories to be used elsewhere. Thanks for the revision in portion
size!

Just a ditto on Alice's reply. Xanthan gum is quite powerful.
Depending on the application a mere sprinkle is sometimes sufficient.
50 lbs? Not unless you plan on chucking it in someone's swimming pool
so they can walk on water. <G>

Not unless you plan to spread it like jam. Try half a teaspoon.

Thanks for all replies! I found some 8 Oz bags at my local HFS.
Package said it contains 25 tablespoons. I read that Xanthan gum is
not quite as effective as a thickener in acid environments like
vinegar or in cold fluids so I will try a tablespoon to a gallon of
warm vinegar dressing and see what happens.
Using such a small amount, it only costs 6 cents too thicken a 16 oz
bottle of dressing. Maybe now my dressing will stay on top of the
salad instead of ending up on the plate.
