Garlic Mozzerella Chicken recipe

Garlic Mozzarella Chicken.
4 chicken breasts.
1 tablespoon butter.
2 cups fresh spinach leaves.
1 tablespoon Parmesan.
6 slices of mozzarella cheese.
1/2 cup heavy cream.
1 8-oz bag of sliced mushrooms.
Garlic to taste - I used two cloves.

Prep time - 3 minutes.

Throw it all together in one big casserole dish.

Put in a 325-degree oven until bubbling and chicken is cooked.
(Mix once during cooking process)
Count your own carbs - there aren't very many.

this sounds good, I'm going to try Swiss cheese- This basic application of
cream/sour cream, parmesan, mushrooms and veggie works on the stove also-
also had a recipe  stirring in a egg yolk helped as a thickener- all on low
heat to not break down the sauce

wonder if it will work with fish- I miss my mushroom soup fish casserole-

I tried this recipe last night and although it was good, I believe next time,
I'll saute the chicken breasts, Stirfry the spinach and make the sauce
separatly.  The sauce got clumpy and was not attractive and the chicken looked
pasty white.  So, a little more effort in preparation would make a much
prettier dish.  But that's just me.
