I know some you can figure out carb counts in your sleep. If you have
a chance would you mind helping me out.
I tried a low carb cookie recipe...Here is the ing. 1 cup peanunt
butter, 2 eggs, 1/2c.splenda sugar, 1/2c. walnuts. It made 19
cookies, so this equals out to how many carbs per cookie?

plug the ingredients into fitday and figure it out for yourself. get a
total and divide by 19.

I put all of your ingredients in my Mastercook program.
I use Splenda packets (the orginal blue/white) as 0.5 carbs
per packet. It takes 12 packets to equal 1/2 cup loose. My
package of walnuts are 1/4 serving at 3 carbs and 3g fiber.
Anyhow, I come up with 3.2 carbs - 1.2 for
fiber = 2.0 net carbs per cookie.

Thanks for taking the time to that! Do you find cooking with splenda
makes things drier? We(my daughter and I) made a this little peanut
butter recipe the other day using real sugar and they were so nice and
chewy and good. My spenda ones were drier and not so tastey. Up
until this recipe, I have only used it in coffee, tea and it's used in
the jello I buy. Learning experience for me : ).

It's not that the Splenda makes it drier, it's that sugar kept it moister.
That's why commercial SF baked goods typically contain both Splenda
(or aspartame/ace-k) and sugar alcohols, for the texture.
You might try adding a little erythritol or a little glycerin.

Splenda packets contain a gram of filler, not a half gram.
