LOTS of calories! As for carbs, I wonder if they are deducting
carbs from fiber?

I wondered the same thing. This is the most objective article on the
restaurants' new menus I've read..thanks for posting.

What I don't get is: since they apparently sent all of the foods to the
same lab ("Working with another laboratory"), how come they only managed
to "estimate" net carbs for one item? It would make more sense if they
didn't test for net carbs at all. And I wonder if the difference in
some of the results aren't a result of errors on the part of the food
preparers. For example, in the Subway Bacon Ranch wrap, the difference
between Subway's count (19) vs the lab's (27) could be accounted for if
the preparer mistakenly used the ubiquitous low fat ranch dressing. Not
that it vindicates the store, since if they made that mistake for GH,
they could make it for the consumer, but it would show that Subway
wasn't intentionally misleading the customers. My favorite discrepancy
though is for TGIF. The restaurant said that the net carbs were 17 GM
and the testing lab only found 15 GM total.
It's an interesting article. I suspect that more than anything, it
proves that testing is not an exact science.
