Mexican Concoction

Last night I had some leftover pork roast in the fridge. I looked up for
recipes at Atkins and found a quesidia that looked good, but no good for
induction. Well I used it for inspiration and did this:

Slice 1/2 onion thinly
chop 1/2 red pepper, and 1/2 of a jalapeno  really small

Cook in a little oil, in a fry pan until onion is soft and translucent.

Place about 2 cups of sliced pork roast in a casserole dish with about 1/2
cup each of Mottserella(sp?), Monterey Jack, and Sharp cheddar

Add about 2 tablespoons each of green taco sauce and red salsa Add the
cooked veggies and mix. Place in oven at 400 for about 30 minutes.

serves 2

It was the best Mexican thing I ever made because of that green taco sauce
and freshly grated cheese. I usually buy the stuff already shredded, but I
will tell you there was a big difference. I will never buy shredded cheese
again.
