I eat it plain, or with splenda and cinnamon, and I'm very happy.  But if
you google the group archives for "ricotta cheesecake" or "ricotta
pancakes," I'm pretty sure both of these were discussed here fairly
recently.  Also try googling for the "REC" and "ricotta" and see what turns
up.
