Nitrates are a result of overfertilising vegetables.

Nitrites are what food companies add to processed meat to make it look
red.

Soak regular bacon in water for an hour, and you get nitrite free
bacon... (almost) Better to do it in cold water in the fridge.

It's a good thing that you want your bacon nitrite free.

Nitrate-free bacon can be found as more specialty food fsotres or on
the internet Google for nitrate-free bacon.I think Trader Joe's sells
one.

However, the case against Nitrates doesn't seem that firm yet. There
have been studies that showed no conclusive evidence of toxicity. Some
even showed that the body converted the nitrate (not into Nitrite-bad
stuff) but other Nitrogen compounds, some even cited beneficial immune
system functions.

A good grocery store should have it.  It is a little pricey though.  I get
mine at Whole Foods when on sale.  I usually grind my own pork butt to make
my own sausage which is much better than store stuff.

The typical Wall Mart shopper knows nothing about nitrate free anything.
