Low GI carbs, what are the benefits?

When I get to maintenance, (Not doing Atkins, doing my own thing) I was
considering adding some low GI carbs back into my diet like long grain rice
and some whole grain or multi grain breads.  In the past these foods never
triggered overeating in me like white rice and white pasta did.  Other than
adding variety to my meals and thus possibly avoiding boredom, do these
foods have nutritional benefits that I won't get from meat, dairy, and dark
green veggies?

I used www.nutritiondata.com to quickly compare whole wheat bread with
raw spinach. Looks like raw spinach is superior, although it has a lot
less calories.

If your objective is to eat a higher percentage of calories from good
carbs, WW bread is not necessariy a bad choice, compared to, say,
white bread.
