Seeking Superbowl LC Dessert

I'm invited to a Superbowl party on Sunday and would like to bring a
low-carb dessert.  I'm doing Atkins and some of the others are doing SBD,
while others are not dieting at all.  There will be shrimp cocktail, an
antipasto salad and I believe someone is bringing sloppy joe (deli)
sandwiches.  Any suggestions for a low-carb dessert that can travel??

TIA,
Sandy K.

I know that sloppy joe's are not low carb - I'm not planning on eating them.
Just wanted to point out what the menu was....

You could make Spaghetti Squash....?
Spaghetti Squash Frittata

Frittatas are the perfect thing for a quick breakfast,
lunch or even light supper. They're even good cold, so you can pack them for
a picnic or a brown bag lunch.

1 C spaghetti squash, cooked by your favorite method and
separated into strands (follow link for instructions)

           4 eggs, lightly beaten
           2 T chopped Italian parsley
           3 T grated Parmesan cheese
1 C finely chopped red onion
           3-4 garlic cloves, minced
           1/2 tsp. salt
           1/2 tsp. pepper
           1/8 tsp. cayenne
           1 T butter

     Serves 6
     Preheat broiler.

Combine all ingredients in a large mixing bowl.

Melt butter in a large skillet. Pour mixture into the skillet and cook
over low heat for about 12-15 minutes. Transfer to broiler for 2 to 3
minutes or until top is browned.

How To Cook Spaghetti Squash

a.. Bake It -- Pierce the whole shell several times with a large fork or
skewer and place in baking dish. Cook squash in preheated 375?F oven
approximately 1 hour or until flesh is tender.
b.. Boil It -- Heat a pot of water large enough to hold the whole squash.
When the water is boiling, drop in the squash and cook for 20 to 30 minutes,
depending on its size. When a fork goes easily into the flesh, the squash is
done.
c.. Microwave It -- Cut squash in half lengthwise; remove seeds. Place
squash cut sides up in a microwave dish with 1/4 cup water. Cover with
plastic wrap and cook on high for 10 to 12 minutes, depending on size of
squash. Add more cooking time if necessary. Let stand covered, for 5
minutes. With fork "comb" out the strands.

Microwave: Pierce Rind. Microwave on high until squash skin feels soft.
Approx. 5-6 per pound.  Let stand for 5 min.  Cut in half.  Remove seeds.
When done, twist out the strands with fork.  Serve with sauces or chill for
salads.

d.. Slow Cooker or Crock-Pot - Choose a smaller spaghetti squash (unless
you have an extra large slow cooker) so that it will fit. Add 2 cups of
water to slow cooker. Pierce the whole shell several times with a large fork
or skewer, add to Crock Pot, cover and cook on low for 8 to 9 hours.
Once the squash is cooked, let it cool for 10 to 20 minutes so it will be
easier to handle, before cutting in half (if it wasn't already) and removing
the seeds. Pull a fork lengthwise through the flesh to separate it into long
strands. (See photos.) You can do these steps ahead of time, then prepare
any of the spaghetti squash recipes whenever the mood strikes.

Spaghetti Squash Bake

 a.. 1 small spaghetti squash
 b.. 1/2 cup water
 c.. 1 pound ground beef
 d.. 1/2 cup chopped onion
e.. 1/2 cup chopped red bell pepper
f.. 1/4 cup chopped green bell pepper
 g.. 1 clove garlic, minced
h.. 1 can (14.5 ounces) diced tomatoes with liquid
 i.. 1/2 teaspoon leaf oregano
 j.. 1/4 teaspoon salt
 k.. 1/8 teaspoon pepper
 l.. 2 1/2 cups shredded Cheddar cheese
Cut spaghetti squash in half lengthwise and scoop out seeds. Place spaghetti
squash, cut side down, in a baking dish; add water to the baking dish. Cover
and bake spaghetti squash in a 375? oven for about 30 minutes, or until the
spaghetti squash is tender and easily pierced with a fork. When cool enough
to handle, scoop out squash, separating strands with a fork. In a large
skillet, cook the beef, onion, red and green pepper and garlic until meat is
browned and vegetables are tender. Drain off fat; add tomatoes, oregano,
salt, pepper and squash. Continue to cook and stir for about 2 minutes, or
until liquid is absorbed. Transfer mixture to an ungreased 1 1/2-quart
casserole; stir in 1 1/2 cups of shredded Cheddar cheese. Bake uncovered at
350? for 25 minutes. Sprinkle spaghetti squash with the remaining 1 cup of
Cheddar cheese and cook for 5 minutes longer, or until cheese is melted.
Spaghetti squash recipe serves 4 to 6.

Yeah, that should go over real well as a dessert at a Super Bowl Party
with my gang.  Maybe with a scoop of LC ice cream?
Cheri - 29 Jan 2004 18:03 GMT
LOL, then we could bring Myra's New York Style Cheesecake for an entree.
Seriously, you can't miss with that cheesecake IMO. :-)

How far are you travelling?  LC cheesecake?

Those LC lemon bars that were posted not too long ago sound awfully
good. :-)

Why dessert?  How about Buffalo wings or Heroin wings, since you can't
eat the sloppy joes?

If you're dead set on dessert, google for Myra's cheesecake recipe.

Heroin wings??  I don't think they'll care it's not dessert if they eat
those. ;^)

Heroin Wings:

4 lb chicken wings
1/2 cup butter
1 cup grated parmesan cheese
2 tbsp dried parsley
1 tbsp dried oregano
2 tsp paprika
1 tsp salt
1/2 tsp freshly-ground black pepper

First, preheat the oven to 350 degrees. Cut the wings up into
"drummettes". (Freeze the pointy "tips" for soup -- they make great
broth!) Then combine the grated cheese and the seasonings. Line a shallow
baking pan with foil. (Do not omit this step, or you'll still be
scrubbing the pan come New Year's Day!) Melt the butter in a shallow bowl
or pan.

Dip each "drummette" in butter, roll in the seasoned cheese, and arrange in
the foil lined pan. Bake for 1 hour at 350 degrees. Kick yourself that
you didn't make a double recipe!!

OK, sorry, didn't know that was a real recipe.  But how did it get the name
Heroin?  Was an 'e' dropped?  Maybe they should be Heroine Wings.

Nope.  Its from a recepie book.  500 low carb recepies or something like
that.  They're called Heroin wings because they're so addicting.  /shrug  I
didn't write it.
