Spring has Sprung!

Its beautiful here where I live. Spring is here! Daffodils are coming
up, probably be blooming soon. I walked my dog today, enjoyed it so
much. The sun felt so good. I can now walk without a cane, and two
blocks instead of one. I think its the weight loss helping with that.
Its the eating healthier a factor too.

Going to be even more beautiful weather this weekend. Plan on having a
cookout. Low Carb Style. I found a recipe for cauliflower potato
salad. Then on the grill some kabobs, with beef and vegetables. Mmmm.
My activity will pick up now. I am so glad winter is almost gone!

Hope other get out and enjoy the beautiful weather where you live.

Well, it's a balmy 40 degrees here in Western New England. The ice is
melting off the roof and for the first time since December, I can see a tiny
patch of ground with dead grass in the middle of the lawn right over the
septic system.

A pothole big enough to swallow a car opened up about a mile away from me,
and driving is now an adventure since every puddle may actually hide a pit
that can take off your wheel. The country roads are slowly turning to mud,
and we are all waiting to see how wet our basements will be when the snow
pack fully melts, since the ground was already saturated last fall from the
endless rains.

Someone please remind me, why do I live here when I could live somewhere
nice? <G>

Good Question.  I moved to the sunny South from Western New England, where I
grew up, 28 years ago.  I love it here in the Carolina/Virginia area.  The
climate is mild and wonderful.

Ohio here, and I thought winter would never end for sure. Its been
dragging and dragging. Or maybe it comes with getting older. Supposed
to get cold again next week, so taking full advantage of the great
weather now.

Went put putting last night. I am looking forward to more activities
with my sons this year. They love to fish also. So many times the last
few years, I would dish out on activities, becauce of chronic pain and
illness.  I am so happy.

Loved the 40 degree sunny day today also.  They are starting to sugar the
maple trees on Conn. and probably in NH if this weather continues. Darn, I
just learned how to tap my trees, but don't need any Maple sugar.

Diane,

If you tap your trees the old way, haul the buckets back from the woods,
stoke the fire with heavy logs for a couple hours and boil down that 40
gallons of sap to one gallon of syrup, you can probably get away with
dripping a bit on your low carb pancakes.

You burn a whole lot more calories making the stuff than you do going to the
store to buy it. <G>

Totally off-topic:  I read that (I've got make-up in my eyes) as "if you
tap your KNEES..." and had to read it several times to figure out where
that went south.

My trees are glad I'm low carb'ing  lol.  now you all know how to sugar a
tree. if you dare, serve the syrup on the side and dip your pancake/French
toast- you will use a lot less

Jenny, sounds like you've done it! I've only lived up here 2.5 yrs, so had
to try the spring tradition of sugaring my many trees. I'm going to remodel
my kitchen so boiling inside was ok--haha, good way to peel wallpaper! It
was fun till we got the electric bill. Still I can just taste the
syrup..that's all I'd dare have is a taste.

My famous breakfast still could be modified to be moderately low carb:
Blueberry pecan pancakes with sourcream and REAL maple syrup drizzled on the
sour cream.

My husband would have a fit if I boiled inside again. Great week ahead for
nice weather- get outside!!! If you see me posting more than a few times
this week, I'm being very bad.

It's a good 35 years since I went sugaring. But once was enough.

It's a lot of work, especially back then before they started hooking up all
that tubing to the trees so you didn't have to contend with the buckets.

I have a little real locally-produced grade B maple syrup every blue moon or
so because it is one of those special New England things. But the pale stuff
you buy as "maple syrup" in  most other parts of the country isn't really
worth the carbs.

It's supposed to get up to close to 60 degrees here (PA) tomorrow.

We are going on a picnic to a nice, wild state park.  We figure to lay
down a tarp under the blanket to stay dry.  A bunch of books to lie
outside and read, maybe a bit of a hike.

Picnic menu: meat and cheese tray (peppered ham, salami, summer
sausage, pepperoni, colby, monterey jack, cheddar), thermos of coffee,
half and half, 2-liter of diet orange soda, flax muffins (for me) and
crackers, apple pie and meatloaf sandwiches (for hubby).

Your picnic menu and outing sounds like alot of fun!  We have alot of
great State Parks here also. We thought of going a little further to
another State this year, so may look your State Parks up on the
internet.  I used to love the apple pie. I about died when seeing how
many carbs is in a slice. Whew!!

Spectacular here, too, with daffodils, hyacinth, jasmine, tulips, etc.

Very cool. I still have a 2-inch thick sheet of ice in my front yard - but
it's a north-facing yard and never gets winter sun. Houses across the street
have bare lawns. No flowers around here yet, alas. But it's bright and sunny
today, and the birds are all cheeping madly. It certainly *feels* like
spring is really coming.
