Does anyone know what this is and where you can get it?

Thanks,

Dale

I'm wondering that, too.  I saw it as an ingredient on something the other
day and did a double take.  How can cornstarch be low GI, I asked myself.

They don't cook it. :-)   I'm not even being a smart aleck:

Whadda scam!  The "low glycemic cornstarch" I saw was an ingredient on
something that was going to be cooked.  So it would become high glycemic
cornstarch when used according to package directions, I imagine.

Not that it was a factor weighed into the decision to buy or not, but
it's the principle of the thing.

Capitalism sucks.  :-(

The Scarlet Letter strikes again. . . .

I saw that "low glycemic corn starch" on their labels too.

Hey, folks, just remember spaghetti and oatmeal are "low glycemic" too.  But
eventually they get into your blood stream as glucose, however many grams
are in the food, and there is no way you will stay in a ketosis state if you
chug a lot of "low glycemic" anything.

No such thing.  Must be a substitute of some sort.  Maybe a
natural one like arrowroot (a root not a grain so less allergy
issues and lower glycemic index, but still a refined starch and
so still almost 100% carb by weight).  Maybe something that
isn't actually starch but acts gooey, like that insoluble stuff
they put in Atkins bake mix.

Interesting.  Thank you for all your responses.  I'm going to go to the
Atkins site and ask them what the deal is with this cornstarch crap.  I
really hope it's not a scam, but I'm afraid it is.

Just a word of caution.  The Atkins people make mistakes - lots of
them.  They're just paid employees.  The site does as well.  Best to
verify with independent sources.

Take care,
Carmen
