This may not be quite what you are looking for, but the Trader Joe's in my
area sell Empire Kosher chicken breakfast sausages. I think they are really
quite excellent.

I have a maple sausage recipe that is real good. The carbs are low, and if you like maple flavoring then this may work
for you
1 1/4 pounds of ground pork
1/2 teaspoon maple extract
1 teaspoon fennel/anise seed
1 teaspoon minced onion, dried
1/4 teaspoon lemon pepper
1/2 teaspoon dried sage
pinch steviaplus or 1/2 packet sucralose
2 drops of chili oil or tiny pinch of cayenne
carbs, 1 gram
protein 16 grams
fat 20 grams
calories 252
All you have to do is mix together and make patties i double mine and freeze it. I also add more maple extract for
flavor, but anyway this is a good recipe give it a shot you may like it also.

Have you given any thought to just buying ground pork and adding your
own spices?
Sometimes that's the only sure way you'll know exactly what's in it.
Labels can be very confusing and/or misleading at times.

Wal-Mart sells these two pound bags of sausage patties that are already
cooked for $3.28. You keep them froze and pop them in the microwave for
about a minute and they are really good. They come in different flavors
such as spicy and maple. I get the spicy. They say they don't have any
carbs in them. In less than five minutes, I can be eating fried eggs and
sausage. umm umm umm

I like the sausage patties you are talking about- even crave them on
occasion and will eat them as a quick snack.
I give each one 1 carb count though since corn syrup is in the ingredients
for the plain variety

What's wrong with massive amounts of saturated fat? Should you be so
inclined, there are sausages made with chicken or turkey. They're all
over the place.

I love turkey sausage. The stuff I have in the fridge right now has 2g sat
fat, and 4g carbs. Kinda carby for induction, but I'm at around 40 - 60
grams a day now, so it's fine for me.
