Can anyone list some good low-carb snacks that are satisfying,
portable, and convenient to take to work? I always get hungry at
work, a desk job, and would like to snack on healthy, low-carb food
rather than junk from the vending machine.
Also, I'd like to hear about people's testimonials regarding the extra
energy they have after cutting down on carbs in the diet. I'm looking
for some inspiration in getting started on this way of eating.

An avocado
Cheese
Celery sticks with cream cheese
Fresh green and red pepper slices
Sardines (prepare your Tic-tacs)
Sliced or cubed ham

Hi. At first you will have less energy...for the first day or two. Then, something happens, your body clicks in and you feel better.
You will find yourself less hungry. BUT if you have a habit of "snacking" sometimes the habit is why people snack, not the hunger. Make sure your stomach is growling, and don't snack just because you want to put something in your mouth. At least, that is my advice, and has helped me lose. I've found myself not being nearly as hungry between meals.
Here are what we've put in our fridge...and I've used in the past, either when I was really "hungry", or at the beginning, when I still had the snacking habit...
hard boiled eggs,
sliced cheese
kielbasa, regular or more dried, which I like better
make up some SF jello with cream cheese and serve it in little containers to take with you. It's creamy and tasty.
other things people use:
nuts....I don't use these as a snack because they are so high in calories and I figure they may slow down weight loss just as those "candy" bars do.
you could use raw veggies like mushrooms and broccoli and make some high fat dip with sour cream...:)

These are my favorite, convenient snacks. I often take them to work:
string cheese
boiled egg
sugar free jello
summer sausage
jerky
nuts

I love my cheese filled weenies.
And my chicken vienna sausages.
And my cheese filled steak fingers.
And my cold chicken wings (buffalo wings).
And deviled eggs, and hard boiled eggs.
And Kroger even had some very good bbq pork rinds out yesterday. I
went back for seconds at their sample tray.

Pepperoni and small individual packets of cream cheese. Sliced meat,
pickled asaparagus and cream cheese rolled up together, hard boiled
aggs, string cheese, Atkins Chocolate Delight shakes!!, Cucumber or
zucchinin slices and a container of tuna mixed up with mayo and dill
pickles. Use the sliced cukes and zukes like crackers! Take the
mixture of tuna and fill a couple of ribs of Romaine hearts and roll
like a burrito, LC Tortilla with a teaspoon of peanut butter inside
folded or rolled. I love to season those frozen chicken tenderloins
you get in a big bag, fry them up, and have some in the fridge. Take a
few cold chick tenderloins. Stuff your celery with tuna, canned
chicken breast, cream cheese,or peanut butter. Take a couple deviled
egss. Of course some of this takes a night befores preparation.

Ha, I have everybody beat, low carb ice cream! Breyers has a 5 net
carb serving ice cream in choc, vanilla, strawberry, and now Butter
peacan! There is also carb solutions which has other types, I like
the mint chip! And I am losing weight from it! Its at Jewel and
Dominicks along with other snack things that are now low carb! I
think the low carb approach is really catching on with stores now!
Its a great feeling!

Well I have been doing this for 1 year and have met my goal. I have tried
all kinds of approaches before LCing. They worked for 1 month with rebounds
that made me bigger than before. No headachs, heart burn or mid day Blues
anymore. Couldn't think of exercise when I began and now on a 40 minute
every other day program. Continue to struggle with healthy snakes as some of
these stimulate old ways of obsessing about eating. I have added fruits, and
more nuts.

When I was first starting out, for my snacks at work I mostly ate beef
jerky, string cheese, and nuts (but no more than a handful!). Sometimes I
would take tuna or chicken salad for lunch and not eat all of it - so I'd
save it and have some later in the afternoon. (Good with veggies.) I don't
snack nearly as much now, so I find that just keeping a jar of mixed nuts
in my desk is fine - I'll have a few as a mid-morning snack, and I'm rarely
hungry enough for a snack in the afternoon.
Energy levels... ABSOLUTELY improved. I was always so tired both in the
late evening and in the mornings. After a couple of weeks on LC, I was
feeling much, much more energetic. I'm still not much of a morning person,
but it's greatly improved. And another thing... I have good skin anyway,
but several people have commented on how great my skin looks now - that I
look much healthier and "glowing".
