Sausage and egg wrap!  Yum!

Tonight for dinner I made a couple of sausage and egg wraps as follows:

I cooked up a couple of breakfast sausage patties, drained, then scrambled
three large eggs.  In the meanwhile, I spread two low-carb tortilla shells
(purchased at WalMart) with about 1/4 cup of shredded mild cheddar cheese
and nuked for 45 seconds until melted.  I crumbled the sausage and divvied
it up between the two tortillas, then did the same with the scrambled eggs.
Rolled them up wrap-style.  Voil?!  On the side, I ate about 1-1/2 cups of
broccoli/cauliflower mix with melted cheddar cheese.  Very filling and
satisfying; almost more than I could eat!

Absolutely delicious dinner -- low carb and a near perfect proportion of fat
to protein for my plan, with plenty of fiber.

These would also make a great quick breakfast if prepared the night before
and microwaved for about 30 seconds in the morning!

For this meal, per fitday:

Calories:       935
Carbs:           26g  (15 net)  (7% of calories, <5% after subtracting
fiber)
Fiber:            11g  (
Fat (Total):    69g  (67% calories)
Saturated fat:  23g  (22% of calories)
Protein:          60g   (26% of calories)

Hey Peter! WHile your on your sausage kick try frying up the ground
sausage like you do hamburger, toss in some coarse cut cabbage, a
sprinkle of pepper and stir fry it. Towards the end when your cabbage
gets tender, throw in a half stick of butter ( helps to thicken the
juices the comes out from the cooked cabbage) I then scoop onto plate
and smother in tabasco. Even without the Tabasco it is DELISH!!!!!

Sounds good, Laureen.  I love fried cabbage, so will definitely try this.

i use the LC tortillas and make something similar for breakfast. I chop up 2
pre-cooked sausage patties (i buy them that way), mix with an egg in a
microwavce-safe container, nuke for about 1.5 minutes and get similar
results.  I usually top with some Taco Bell hot sace--low carb, high flavor.

I love making a scrambled egg and top it with bacon (I buy the already
cooked for convenience) add a slice of baby Swiss cheese. I lay the tortilla
on hot pan with a bit of butter and fold it over with the stuff on it. Also
yummy with salsa, avocado and sour cream if one has time in the morning:)
