Almond Flour "Toll House" Bars

Don't make these if you are on induction or if cookies are included on your
trigger food list (if you have one) or if you can't eat just one.

And, for JC, these technically are not low carb [ ;)]
So, here goes.

1 Stick butter
1 cup Splenda
1 Egg
1/2 tsp vanilla
1/2 tsp cream
1 1/2 cups almond flour
1/8 tsp salt
1/4 tsp baking powder
1-2 Low-carb chocolate bar(s)

Preheat oven to 350 degrees F.
Cream softened butter, then add Splenda and mix until light and fluffy.  Add
egg, vanilla and cream and mix well.
In a separate bowl, mix almond flour, salt and baking powder, then mix into
wet mixture.
Crush or otherwise break into pieces the chocolate bar(s) and fold pieces
into the dough.
Pour into a greased baking dish (I used two 7 1/2 x 5 1/2 dishes) and bake
uncovered for 25-20 minutes.
Enjoy, buy eat them responsibly.

You can cut the carbs way down by substituting a DaVinci sugar free syrup
for some or all of that very high carb cup of Splenda.  I made very similar
almond cookies with the substitution and they came out fine.  You might have
to bake them a little longer because of the additional moisture.

That will make the recipe low carb, but I will warn everyone that 1) they
are very high calorie 2) they are very hard to resist.

An alternative that is much lower carb is the grated coconut/splenda/protein
powder macaroon. You can throw the chopped up sugar free chocolate in them
and get nice cookie that is good, but not so good that you'll "end up in the
gutter with crumbs on your face"  (and if anyone can remember who wrote the
song that line is from I'd really appreciate the reference. I couldn't find
it on Google.)

It's from a song called "Rum by Gum" and I was in a group about 40
years ago that sang it. We were never able to find who wrote it. One
reference we found said it was originally from the Womens' Christian
Temperance Union, but if it did come from there, somebody seriously
messed with the words to make them archly funny.

Bob,

Thanks so much for tracking down that lyric! That was a song we used to sing
when we all got together with our guitars back in college in the
mid-Sixties. Obviously, the image has stayed with me for life.

I had a couple Theodore Bikel albums back then too.

thanks for the suggestion--i'll give it a try sometime.  i can allow enough
carbs for the spelnda not to matter, but the syrup is appealing.
