2 pancake "mix" reviews....

RT - 09 Mar 2004 02:52 GMT Ok so with Induction ending Saturday I took it upon myself to try two LC pancake recipes as a reward (one per day). The contenders: Atkins Pancake Mix (not the Deluxe) and Jenny's "Better than the Boxed Stuff Homemade Low Carb Pancakes" (http://geocities.com/jenny_the_bean/recipes.htm).
Atkins Mix----- Cost: 5.99 Serving Size: 1/4 cup, about 4 medium pancakes (but size is relative ;-)), there are 10 servings in the package of 9 oz. Carbs: 6g -3g fiber = 3g Net Carbs Results: Mixes fairly easily, cooks just like regular pancakes and tastes pretty darn close. Moderately fluffy, slightly sweet taste that goes well with butter and/or SF syrup.
Jenny's BttBSHLCP ;-) ----------------------
Cost: varies per whey protein used, I used Precision Engineered Vanilla from Vitamin World (www.vitaminworld.com but I found a store near me); 13.99 with their free member's card (obtained by spending $20 the first time you shop. I bought the protein at 22.99 + some supplements at 9.99 and then they apply the card, etc. VERY cool).
Serving Size: varies, but roughly 2.5 tbs protein + 3/4 teaspoon baking powder. Container is 32oz, so that's something like 64 tablespoons so let's call it 25 servings ;-) Makes 2 fairly large or more smaller pancakes. I made two large-ish silver dollars and had enough left to make some waffles in my new waffle machine ;-)
Carbs: varies per protein; with her recipe using the P.E. it comes out to 1g per "serving".
Results: Pancakes came out very soft and texture is much like the Real Thing. They didn't seem to be quite as fluffy as the Atkins Mix, but my griddle also sits on an incline and the mix kept dripping down so this is most likely my fault ;-) The Vanilla flavoring of the P.E. plus the vanilla (or whatever you choose) of the DaVinci/Atkins syrup makes for really good "built in" flavor as well. See Notes below for more info.
Notes The first time I used ISOPURE Zero Carb protein mix. BIG mistake. The stuff is so thin it practically disappears in water and made for stiff crunchy pancakes; granted I could have also just mixed the stuff up wrong but I don't think so (someone correct me if they had better luck). Following Jenny's tip and getting the P.E. made a HUGE difference (not to mention it's way cheaper). I noted that the ISOPURE wants something like 10oz of water to make a shake, wherease the P.E. wants 1/4 cup, so that probably speaks a bit to the difference.
Overall-------------- The winner? Based on cost and the ability to experiment with the ingredients, I think I'm going to lean towards Jenny's recipe. It also has fewer carbs (even if you don't do the "net" trick). The flavors and textures were close enough that I don't think I'd miss getting the "official" Atkins mix. Next quest is to make up a large batch and freeze the waffles/pancakes that can serve as quick breakfast treats to break up the egg/bacon/sausage monotony.
I only hope they are legal enough to enjoy on my pseudo-post-Induction-but-not-quite-OWL ;-)

I use this recipe almost every weekend - actually, I use the spiced version a little bit further down Jenny's page. Against her recommendation I use soy protein powder and like the results a lot better than the two times I tried whey powder. I find the pancakes a tiny bit dry but serving them with butter, berries, or sour cream solves that problem easily. I don't use sugar free syrup but I suppose that would work too if it appeals to you. I highly recommend this recipe. Last week I put a half a cup of blueberries in the batter and the results were excellent!

jpatti - 09 Mar 2004 14:43 GMT Thanks for the review.
I tried a flax-based pancake recipe and it wasn't very good. also tried a flax muffine recipe and it wasn't very good either. Neither were *bad*, but neither were worth the work of fixing particularly. I may be giving up on flax shortly.
I bought stuff to try Jenny's barbecue sauce this week. I will have to try her pancake recipe sometime in the near future now that it has gotten a good review.

It isn't bad, at least better than Atkins brand. I still prefer my "scratch" recipe:)

I bought some flax meal to experiment with, but thus far the "baked goods" turned out haven't been worth the time or effort. So I'll see how protein-powder recipes do since flax seems to be a bust.
Jenny - 10 Mar 2004 21:52 GMT Flax turns into slime when I cook with it.
Grated coconut OTOH extends recipes made with whey protein powder quite nicely.

I tried the Atkins pancake mix about a year ago and really hated it. They looked delicious, just like regular pancakes when griddled but had the taste of cardboard. I couldn't finish more than a couple of bites before throwing them out...
What is the difference in the deluxe over the regular mix? I have no idea which one I bought (and leery to try again)...
Thanks, Dave
DJ Delorie - 09 Mar 2004 21:11 GMT > I tried the Atkins pancake mix about a year ago and really hated it. I found that the pancake recipe on the Atkins BAKE mix was better than the pancakes from the Atkins Pancake mix. Go figure.

Go figure. I don't mind the Atkins pancake mix (although there are at least two of them). They don't taste too bad for fake and don't have any maltitol or other nasties. Some fake syrup (filled with nasties, I'm sure), and I'm set.

Christy - 09 Mar 2004 23:31 GMT Dave- I didn't like the original Atkins pancake mix either...but the deluxe is much better...I add a little vanilla and melted butter to the batter. Very good. CP

DJ Delorie - 10 Mar 2004 23:38 GMT > What is it with you people and frankenstein food? Pancakes are not > low carb! Mine have only 3 grams of carbs per serving. How much lower do I need to go to qualify as low carb?
Jenny - 11 Mar 2004 01:10 GMT We're talking about pancakes made out of whey protein, butter and egg. They look and taste like pancakes, but nutritionally they are a fancy omelets. Quite low carb and a nice way to take care of any lingering bread cravings.

I'm not exactly sure what is so evil about making a batter out of protein powder, eggs, vanilla, and spices, cooking it on a griddle, and serving it with some sour cream, some berries, or a little nut butter on a weekend morning.
Is that really "frankenstein food?" Okay, I'll grant that protein powder is a little weird.

Jenny - 11 Mar 2004 22:10 GMT The Tofurkey is truly evil, not the least reason being that for many women, eating a lot of tofu is the best way to destroy your thyroid.
I just got this reinforced when I mentioned my soy problems to a friend who told me she is now on thyroid medications for life thanks to years of following a long-term vegetarian diet full of tofu.
Don't overdo it with SOY if you have any kind of weight problem suggestive of a borderline thyroid!

I make my pancake with 1/2 cup ground flaxseed, 1/2 cup egg whites, 1 scoop protein powder, and a pinch of baking powder. Very tasty. High calorie, but it keeps me going until well into the afternoon.

Robbie - 13 Mar 2004 02:58 GMT I make a very nice pancake mix for one out of 1/2 cup cottage cheese, 2 tbsp ground almonds and 2 eggs all beaten together and fried in a little oil. I usually enjoy with a dollop of sour cream and sprinkling of berries.
